2/3 cup medium grain rice
1/4 teaspoon salt
2 eggs
1/2 cup sugar
1 (14 ounce) can coconut milk
1 tablespoon lemon juice
1/3 cup golden raisin
1 cup sweetened flaked coconut

Steps:

  • Bring water to a boil in small saucepan; stir in rice and salt. Rduce heat to low; cover and cook 15 minutes or until all water is absorbed.
  • Heat oven to 325°F Whisk eggs and sugar in medium bowl; whisk in coconut milk and lemon juice.
  • Spoon cooked rice into ungreased 8 inch glass baking dish; sprinkle with raisins. Pour egg mixture over rice; stir to blend.
  • Bake 20 minutes. Stir well; sprinkle with coconut flakes. Bake 15-20 minutes more or until knife inserted halfway between center and edge comes out almost clean. Serve warm.

1 (1 3/4 ounce) package instant pudding mix, I use Vanilla or 1 (1 3/4 ounce) package coconut cream
2 cups half-and-half (or whole milk)
1/2 cup flaked coconut, chopped pistachios, raisins, macadamia nuts, chocolate chips, fun chips (optional) or 1/2 cup diced fresh fruit (optional)
whipped cream, chocolate curls, maraschino cherries for garnish

Steps:

  • Prepare rice according to package directions. Set aside to cool.
  • In mixing bowl, combine pudding mix, and Half and Half.
  • Mix for 2 minutes.
  • Fold in rice and desired choice of add ins.

2 cups water
2 inches cinnamon sticks
1 lime peel (2-inch-long strip)
1 cup long grain white rice, uncooked
1 quart milk
3/4 cup sugar
1/4 teaspoon salt
4 egg yolks, lightly beaten
1/2 teaspoon vanilla
1 1/2 cups shredded coconut
1 tablespoon butter, cut up
ground cinnamon

Steps:

  • In a medium saucepan, bring the water to a boil; add stick cinnamon and lime peel.
  • Reduce heat, simmer covered, for 5 minute.
  • Add rice; return to boiling.
  • Simmer, covered, for 20 min., or until all the liquid is absorbed and the rice is tender.

2 1/2 cups coconut milk
1 1/4 cups milk
1 large strips lime rind
1/4 cup caster sugar
1/2 cup butter
1 pinch ground star anise
1 cup fresh fruit, to serve
