1 large egg
1 1/2 cups shredded sharp Cheddar

1 tablespoon olive oil
1 (16 ounce) package frozen roasted corn (such as Trader Joe's)
1 small zucchini, quartered and thinly sliced
2 tablespoons extra-virgin olive oil
1 tablespoon honey
1 tablespoon lemon juice
1 tablespoon water
½ teaspoon salt
¼ teaspoon ground black pepper
1 stalk celery, diced

1/4 cup margarine
8 ounces frozen mixed vegetables
1 (19 ounce) can cream-style corn
1 1/2 teaspoons baking powder
1/2 cup flour
3 eggs, beaten
1/2 cup milk
1 teaspoon salt
1 teaspoon garlic, minced
1/2 teaspoon black pepper (or to taste)
2 jalapenos, seeded & diced small
2 ounces of drained pimientos (optional)
8 ounces muenster cheese, grated (reserve 2 oz)
1 tomatoes, very thinly sliced
cooking spray

Steps:

  • Heat oven to 350. Spray rectangular glass casserole pan with cooking spray.
  • Place margarine & frozen mixed vegetables into glass mixing bowl. Microwave 2 minutes until vegetables are thawed & butter is melted.

2 cups diced green peppers
2 cups diced sweet red peppers
2 cups diced celery
1 cup minced fresh parsley
1 cup chopped green onion
1/2 cup shredded parmesan cheese
2 teaspoons ground cumin
1 1/2 teaspoons salt
3/4 teaspoon pepper
1/2 teaspoon hot pepper sauce
1/8 teaspoon cayenne pepper
3 tablespoons olive oil or 3 tablespoons vegetable oil (I used olive)
2 cloves garlic, minced (I used about 1 tbs.+)
6 tablespoons lime juice

Steps:

  • In large bowl, combine first 12 ingredients.

1 stick butter
1 can green giant mexi-corn, drained (do not substitute whole yellow corn)

1 carton sour cream
1 can cream of chicken soup
2 cups cheddar cheese, grated

  • Preheat the oven to 350°F (180°C).
  • Cook rice according to package directions.
  • Chop water chestnuts into small dice.
  • Melt stick of butter in a 9 x 13-inch (22 x 33 cm) glass casserole dish.
