6 slices bread, crusts removed
4 cups cubed cooked chicken
1/2 pound fresh mushrooms, sliced
6 tablespoons butter, divided
1 can (8 ounces) water chestnuts, drained and chopped
1/2 cup mayonnaise
6 slices Monterey Jack cheese
4 slices process American cheese
3 eggs
1-1/2 cups milk
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
2/3 cup dry bread crumbs

Steps:

  • Place bread in a greased 13-in. x 9-in. baking dish. Top with chicken. In a skillet, saute mushrooms in 2 tablespoons butter until tender. , Using a slotted spoon, place mushrooms over chicken. Combine water chestnuts and mayonnaise; spoon over mushrooms. Top with cheeses. Beat eggs and milk; pour over cheese. Combine soups; spread over top. Cover and refrigerate overnight. , Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 350° for 1 hour. Melt remaining butter; toss with bread crumbs. 4 cups frozen broccoli florets, thawed and drained

1 cup sliced fresh mushrooms
1 can (10-3/4 ounces) reduced-fat reduced-sodium condensed cream of mushroom soup, undiluted
2/3 cup reduced-fat plain yogurt
1/3 cup reduced-fat mayonnaise
1 teaspoon prepared mustard
1/4 teaspoon curry powder
2 tablespoons grated Parmesan cheese

  • Prepare rice according to package directions, omitting the butter. 4 chicken breasts, boneless and skinless
1 c chicken broth
2 clove garlic
2 wedges of onion
4 c pepperidge farm herb seasoned stuffing mix
1/2 c butter
1 can(s) cream of chicken soup
1 pt (16oz) sour cream
8 oz frozen broccoli - thawed (optional)
**YOU MAY SUBSTITUTE 8 OZ OF ANY FROZEN VEGGIE YOU WANT FOR THE BROCCOLI.

Steps:

  • 1. Place chicken breasts, broth, garlic, and onion in a skillet and bring just to a boil over medium high heat. Turn heat down to medium, cover and simmer until chicken is no longer pink - about 15-20 minutes.
  • 2. Remove chicken from skillet, and shred with a fork and set aside. Reserve the broth (this should equal 1 cup, but if it doesn't, add enough canned broth to equal a cup).
  • 3. Melt butter and pour over stuffing mix in a bowl and whisk with a fork to blend. Spread 1/2 of the stuffing/butter mixture in the bottom of a 9x13 inch baking dish.
  • 4. Meanwhile, blend the soup, sour cream and reserved broth together with a wire whisk. Place shredded chicken over the layer of stuffing in baking dish. If using broccoli, spread it over the chicken. Pour soup mixture over broccoli and chicken, then top with the remaining stuffing. Bake casserole in a 350 degree oven for 30 minutes, or until hot and bubbly. Serve and enjoy!!!!!

I got this recipe from J&S Oldtime Recipe site. Prep time is approximate, because I was doing other things in between the chopping and mixing.

8 ounces noodles
3 cups cooked chicken, diced
1/2 cup green pepper, diced
1/2 cup celery, diced
1/2 cup onion, diced
4 ounces canned mushrooms
1/2 cup chicken broth
1/2 cup parmesan cheese
2 tablespoons butter, melted
1 cup sharp cheddar cheese
1/2 teaspoon basil
1 1/2 cups small curd cottage cheese
1 can cream of chicken soup

Steps:

  • Cook noodles according to pkg. until barely tender.
  • In a very large bowl, combine the remainding ingredients with the noodles, making sure the noodles are separated and coated with liquid.
  • Pour into a greased crockpot.
  • Cover and cook on Low for 6-10 hours or HIGH 3-4 hours.
  • DO NOT LIFT LID DURING COOKING! It will brown on the sides,if cooked on low and that is the way I recommend it be done.

1 c long grain & wild rice mix
1/2 c onion, finely chopped
1/2 c butter
1/4 c flour
1 can(s) 6-oz. sliced mushrooms, drained
chicken broth
1/2 c light cream or evaporated milk
3 c cooked chicken breast, diced
1/4 c pimentos, drained and diced
2 Tbsp fresh parsley, chopped
1/2 tsp salt (or more to taste)
1/4 tsp pepper
1/2 c slivered almonds

Steps:

  • 1. Prepare rice mix according to pkg. instructions.
  • 2. Meanwhile, saute onions in butter until translucent and tender. Remove onions from heat and stir in flour. Mix well until all trace of flour disappears. Drain mushrooms, reserving liquid, and add enough chicken broth to mushroom liquid to make 1 1/2 cups.
  • 3. Gradually add liquid to onion/flour mixture and then add cream stirring until mixture is thickened.
  • 4. Add rice, mushrooms, chicken, pimento, parsley, salt and pepper.
  • 5. Prepare a 2 qt. casserole and add chicken mixture. Sprinkle with almonds.
  • 6. Bake at 350 degrees F for 25-30 minutes or until heated through.

3 small fryers
1 medium whole onion
1 medium whole carrot
2 tsp salt
1/2 c butter
1/2 c minced onion
1 c minced celery
1 1/2 loaves bread
2 tsp poultry seasoning
2 can(s) cream of chicken soup
1 large can evaporated mlik
bread crumbs

Steps:

  • 1. Place fryers, whole onion, carrot and salt in a large kettle. Pour in 2 quarts water, cook until fryers are tender. Remove fryers from broth cool. Reserve broth.
  • 2. Remove skins and bones from chicken, cut chicken into bite size pieces.
  • 3. Melt butter in frypan. Add minced onion, and celery saute until transparent.
  • 4. Break bread into small pieces, add sauteed vegetables and poultry seasoning. Add enough reserved broth to moisten.
  • 5. Mix soup and milk until smooth. Place bread mixture in greased casserole pour in half the soup mixture.
  • 6. Arrange chicken over soup mixture add remaining soup mixture. cover with bread crumbs
  • 7. Bake in a preheated 375 degree oven for 30 minutes.

3 c chicken thighs, skinless and boneless
1/2 c celery, diced
1/2 c green bell pepper, diced
1/2 c onions, diced

2 Tbsp butter, melted
1 c cheddar cheese, grated
1/2 tsp basil
1 can(s) cream of chicken soup

  • 1. In large bowl, combine all ingredients except noodles and chicken.
  • 2. Grease the crockpot. Place chicken in crockpot, then pour in mixture over top.
  • 3. Cover and cook on low for 3-4 hours.
  • 4. Cook noodles according to package directions until barely tender; drain and rinse thoroughly.
  • 5. Add noodles and mix together. Cook for another 2-3 hours.
  • 6. Can cook on high for 3-4 hours but use of cooked chicken is recommended to insure your health.
  • 7. If it comes out a little watery you will need to add 2-3 tablespoons of cornstarch to about 1/2 c of hot water. Then stir a little of the mixture in until the sauce gets the consistancy you desire.
