This recipe was on the Ore-Ida Hash Brown package, and it's a quick dish to throw together. Just need a little patience to wait for it to bake for an hour. It called for frozen chopped onions, but I used regular onions (I didn't know you could buy frozen chopped onions). I left off the butter and cornflake topping, and it was still very good. Next time I think I'd throw in some jalapenos or something to spice it up, and a little cheddar cheese would really be over the top. Serving size is estimated.

- Prepare the hash browns: Peel the potatoes, then use a box grater to shred them lengthwise into long strands, then place them immediately into a large bowl of cold water to prevent them from oxidizing. Pour out the water, add a second round of cold water until the shredded potatoes are immersed, and let them sit for about 5 minutes.
- While the potatoes soak, prepare the crème fraîche: Add crème fraîche, dill and lemon zest to a medium bowl and whisk until aerated, about 1 minute. Season to taste with salt; refrigerate until ready to serve.

- Using a coarse grater, grate the cauliflower until the entire head has crumbled down into small bit.
