SPINACH CON QUESO
Styled after a similar appetizer at The Blue Moose in East Grand Forks, Minnesota, this is a very addicting creamy appetizer that goes well with tortilla chips. It has a little kick, but not enough to make your eyes water. Of course, for the heat lovers, you can kick it up a notch if desired. This has become an instant family-favorite and one of my most requested appetizers.

TEXAS BEST CHEESE DIP (CHILE CON QUESO)
This is a delicious cheese dip that my daughter makes. The cream cheese gives it a wonderful consistency. All the fresh ingredients make this a dip that you will be asked for over and over again! Please note I have put "to taste" on alot of the ingredients as it depends on how big your bunch of veggies are. If you actually get lucky enough to have any left it keeps in the fridge a good while and reheats great. I usually serve/take this dip in a crockpot so it stays warm.

Tips for the Best Con Queso
- Use freshly grated cheese for the best flavor and texture.
- Shred your own cheese from a block rather than buying pre-shredded cheese, as this will prevent the cheese from clumping together.
- Use a variety of cheeses to create a more complex flavor. Some good options include cheddar, mozzarella, Monterey Jack, and pepper Jack.
- Season your queso to taste with salt, pepper, and spices such as chili powder, cumin, and garlic powder.
- Keep your queso warm and creamy by placing it in a slow cooker or fondue pot.
- Serve your queso with a variety of dipping options, such as tortilla chips, vegetable crudités, or bread cubes.
Conclusion
Con queso is a delicious and versatile dish that can be enjoyed as an appetizer, snack, or main course. It is easy to make and can be customized to your own taste preferences. So next time you are looking for a quick and easy meal or snack, give con queso a try.
