- Heat oil in a large, heavy pot over medium heat. Add the onions and garlic and cook, stirring for a few minutes, until the onions have wilted. Add the bell peppers, jalapeno, chili powder, and cumin, and cook, stirring, for 3-5 minutes longer, until the peppers have softened.
- Add the stock or water, bulgur (if using), grated chocolate, tomatoes, and beans. Bring to a boil, lower heat, and simmer gently for 25 minutes. Add the corn (and TVP, if using), stir, and cook 5 minutes longer.

- 1. Spray large nonstick saucepan with nonstick cooking spray; heat over medium heat. Add Chicken and Onion; cook and stir minutes or until chicken is browned. Drain Fat.
- 2. Add remaining ingredients to saucepan; bring to a boil. Reduce heat to low; cover and simmer 15 minutes.

- Heat oil in a large pot or Dutch oven over moderate heat. Add onion, celery, and carrots. Cover and cook, stirring occasionally, until vegetables are soft, about 10 minutes. Add cumin and coriander and cook, stirring, for 1 minute more. Add ground turkey; raise the heat to high and cook, breaking up the meat with a spoon, until no longer pink.
