1 cup uncooked long grain rice
1/4 cup water
1/4 teaspoon salt

1/2 cup frozen green peas, thawed
2 tablespoons minced fresh parsley

Steps:

  • In a large saucepan, combine the first six ingredients. Bring to a boil. Stir in peppers. Reduce heat; cover and simmer for 15-20 minutes or until rice is tender., Remove from the heat. Stir in peas. Cover and let stand for about 5 minutes or until heated through and liquid is absorbed. Stir in parsley.

3 tablespoons extra-virgin olive oil
1/2 medium onion, finely chopped
1/2 red bell pepper, seeded and chopped
1/4 medium jalapeño pepper, seeded and chopped (optional)
1 garlic clove, chopped
1 1/2 cups long-grain white rice
1 cup frozen corn, thawed
1 teaspoon ground cumin
Kosher salt and freshly ground black pepper
2 1/4 cups chicken stock
1/4 cup chopped fresh cilantro
1 tomato, seeded and diced

Steps:

  • Heat the oil in a heavy, large saucepan over medium-high heat. Add the onion, red peppers and jalapeño and cook, stirring often, until soft and translucent, about 4 minutes. Add the garlic and cook until fragrant, 1 minute, being careful not to let it burn.
  • Add the rice and corn and saute 1 minute, stirring constantly to toast the rice and coat with oil. Sprinkle with the cumin and 1 teaspoon each salt and pepper. Pour in the chicken stock, raise the heat to high and bring to a boil. Reduce the heat to low, cover and cook until the rice is tender, 12 to 15 minutes.
  • Fluff the rice with a fork and carefully fold in the cilantro and diced tomatoes. Season with additional salt and pepper to taste.

2 cups long-grain white rice
1 teaspoon kosher salt
2 tablespoons olive oil
3 cups boiling water
3 carrots, peeled
½ cup green beans
½ cup frozen green peas, thawed
¼ cup sliced green onions
¼ cup diced red onion
2 large red bell peppers, diced
1 large orange bell pepper, diced
2 teaspoons kosher salt, or more to taste
1 pinch cayenne pepper, or to taste
¾ cup sherry vinegar, divided
¾ cup olive oil, divided
¼ cup chopped fresh dill
¼ cup chopped Italian parsley

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine rice, salt, and olive oil in a baking dish. Stir to coat rice completely. Pour in boiling water. Cover tightly with aluminum foil.
  • Bake in the preheated oven until rice is tender, about 35 minutes.
  • Let rest, covered, for 10 minutes. Fluff rice with a fork until no large clumps remain. Let cool until barely warm and almost room-temperature.
  • Fill a large bowl with ice and cold water. Bring a large pot of lightly salted water to a boil. Slice carrots into long matchsticks. Boil carrots and green beans until beans are bright green, 2 to 3 minutes. Drain in a colander and immediately immerse in ice water for several minutes to stop the cooking process. Drain and dice vegetables.
  • Transfer rice to a large mixing bowl. Add carrots, green beans, peas, onions, and bell peppers. Season with salt and cayenne. Pour in 1/2 cup vinegar and 1/2 cup oil. Mix thoroughly. Cover with plastic wrap and refrigerate to let flavors blend, 4 to 24 hours.
  • Taste and season salad with more salt as needed. Pour in remaining vinegar and oil. Add dill and parsley and mix well. Let salad warm up slightly before serving, if desired.

  • In a medium saucepan, combine the rice, bell pepper, carrots, jalapeño, 2 teaspoons salt, Thai Kitchen coconut milk, and water, then stir to combine. 1 small head cauliflower
2 teaspoons olive oil
1 red bell pepper
2 -3 stalks celery
1 large leeks or 1 large onion
2 garlic cloves, more if desired
1 tablespoon sodium-free chicken broth
1 tablespoon sodium-free vegetable stock
1 teaspoon lemon pepper
1 teaspoon seasoning salt or 1 teaspoon salt, to taste
1 tablespoon fresh parsley, chopped
water, as needed

Steps:

  • In a food processor, chop the cauliflower until it looks like 'rice', remove and set aside.
  • In food processor chop one seeded red pepper, the celery, garlic and the onion.
  • If using the leek, slice the leek in 1/2 inch slices.
  • Heat oil in non-stick saute pan, add the vegetables, and stir over medium heat until the vegetables start to 'weep' and release some of their liquid.
  • Add the spices and set heat to low, cover and cook until 'rice' is the desired consistency. Add small amounts of water, if needed.

Can't wait to try this delicious-sounding recipe. Try this wonderful recipe with your next stir-fry or just by itself! Recipe is from my Kenny Roger's cookbook. (Prep time does not include cooking time for rice).

vegetable oil (or your choice of oil, coconut oil sounds wonderful to me)
2 eggs, beaten
2 large garlic cloves (pressed or minced)
2 tablespoons gingerroot, minced
6 cups rice (unsalted, cooked)
1 (8 ounce) can water chestnuts, sliced (drained)
1 cup ham, julienned
1 cup carrot, shredded
1 cup frozen peas, thawed
1 cup green onion, chopped
1/3 cup soy sauce

Steps:

  • Heat 2 tablespoons oil in a 12-inch skillet. Add eggs. Tilt skillet so eggs form about a 6-inch pancake. Cook until set spooning oil over eggs where necessary to set edges. Remove from skillet with a spatula. Cool; cut into strips.
  • Add 3 tablespoons oil to skillet. Saute garlic and ginger. Add rice; stir fry, lifting from from the bottom until grains separate. Add water chestnuts, ham, carrots, peas, green onion and soy sauce. Continue to lift from bottom while stir-frying. Remove from heat. Stir in egg strips.

2/3 cup uncooked wild rice, rinsed, drained
1/2 cup chopped onion (1 medium)
5 1/4 cups Progresso™ chicken broth (from two 32-oz cartons)
2 medium carrots, thinly sliced (1 cup)
1/2 teaspoon dried marjoram leaves
1/8 teaspoon pepper
2 boneless skinless chicken breasts, cut into 1/2-inch pieces
1 1/2 cups frozen corn, thawed, drained
1 cup frozen broccoli cuts, thawed, drained

Steps:

  • In 3- to 4-quart slow cooker, mix all ingredients except thawed vegetables.
  • Cover; cook on Low heat setting 8 to 9 hours.
  • About 5 minutes before serving, stir in thawed vegetables. Increase heat setting to High; cover and cook 5 minutes longer or until vegetables are crisp-tender.

2 Tbsp gingerroot, minced
6 c rice (cooked and unsalted)
1 can(s) 8-oz. can sliced water chestnuts, drained
1 c ham, julienned
1 c carrot
1 c frozen peas, thawed
1 c green onion, chopped
1/3 c soy sauce

Steps:

  • 1. Heat 2 tbsp. oil in a 12-inch skillet. Add eggs. Tilt skillet so eggs form about a 6-inch pancake. Cook until set - spooning oil over the eggs where necessary to set edges. Remove from skillet with a spatula. Cool; cut into strips.
  • 2. Add 3 tbsp. oil to skillet. Saute garlic and ginger. Add rice; stir-fry, lifting from the bottom until grains separate. Add water chestnuts, ham, carrots, peas, green onion and soy sauce. Continue to lift from bottom while stir-frying. Remove from heat. Stir in egg strips.

Tips:

  • To make the confetti rice more flavorful, use a flavorful broth instead of water. Vegetable broth, chicken broth, or beef broth are all good options.
  • Add some vegetables to the rice for a more colorful and nutritious dish. Chopped carrots, peas, or corn are all good choices.
  • If you don't have any food coloring, you can use natural food coloring agents like turmeric (for yellow), paprika (for orange), or beet powder (for pink).
  • Be careful not to overcook the rice, or it will become mushy. Cook it until it is tender but still has a slight bite to it.
  • Serve the confetti rice immediately, or it will lose its vibrant color.
