Tips:

  • Use high-quality chocolate for the best flavor. A semisweet or bittersweet chocolate with a cocoa content of at least 60% is a good choice.
  • Make sure the cream is cold before whipping it. This will help it whip up quickly and smoothly.
  • Don't overmix the chocolate mixture. Overmixing can cause the chocolate to become grainy.
  • Chill the truffles for at least 30 minutes before dipping them in chocolate. This will help them hold their shape.
  • If you're having trouble dipping the truffles, use a fork to help you. Dip the fork in melted chocolate, then use it to pick up a truffle and coat it in chocolate.
  • Store the truffles in the refrigerator for up to 2 weeks.
