SAM THE COOKING GUY'S CEDAR PLANK SALMON

Sam the Cooking Guy's Cedar Plank Salmon image

My neighbor's jokingly refer to this as Salmon Brulee - yum yum! This is very impressive looking when done, not to mention easy. You can buy untreated cedar planks at a lumber yard. It should be about an inch thick with at least an inch border. Keep a spray water bottle on hand, just in case of a flare-up. Really yummy served with warm croissants.

Time 20m

Yield 6-8 serving(s)

Number Of Ingredients 8

1/2 cup soy sauce
1/3 cup sugar
1/4 cup sake
1 garlic clove, minced
1 teaspoon fresh ginger, minced
1 whole lemon, juice of
1 teaspoon dry mustard
1 large salmon fillet, about 2 pounds

Steps:

  • Combine all ingredients except the salmon in a saucepan and bring to a boil.
  • Turn down heat and simmer for a few minutes until syrupy.
  • Turn oven to broil. Cover a large baking sheet with foil, it's messy.
  • Place salmon on the foil and baste well with the sauce.
  • Broil the salmon depending on thickness about 10-15 minutes until done.
  • Baste a couple of times during cooking. If it starts to get crispy and a little bit black, that's good.

Tips for Cooking Salmon:

  • Choose the Right Salmon: Opt for wild-caught salmon whenever possible, as it's generally considered more flavorful and sustainable.
  • Thaw Frozen Salmon Properly: If using frozen salmon, thaw it slowly in the refrigerator overnight or under cold running water for 30 minutes.
  • Season Simply: Salmon has a delicate flavor, so don't overpower it with strong seasonings. Salt, pepper, lemon juice, and herbs are classic choices.
  • Cook to the Right Temperature: Salmon is best cooked to medium-rare or medium, with an internal temperature of 125-130°F (52-54°C). Overcooking can dry out the fish.
  • Use the Right Cooking Method: Salmon can be cooked in various ways, including baking, grilling, pan-frying, and poaching. Choose a method that suits your taste and the desired texture.
  • Pair Salmon with Complementary Ingredients: Salmon pairs well with various vegetables, grains, and sauces. For example, try roasted vegetables, quinoa, or a creamy dill sauce.
