1 1/2 cup boiling water
1 - 6 oz box raspberry jello
1 - 8 oz tub Cool Whip Topping (can be found in the freezer aisle by the frozen fruit) See Notes*
12 oz frozen raspberries

Steps:

  • In a microwave-safe bowl, heat 1 1/2 cup water until very hot (about 1 1/2 to 3 minutes depending on how cold the water was when starting).
  • Add raspberry jello to boiling water. Stir for 1-2 minutes until sugar is dissolved.
  • Add frozen raspberries to jello mixture.
  • What a few minutes until jello mixture cools and begins to thicken. Once it has thickened, pour 1 cup of the mixture into a new bowl.
  • Add 1/2 to 3/4 of the Cool Whip to the 1 cup of jello mixture. Fold in carefully until mixed.
  • Add equal amounts of creamy cool whip mixture into bottom of each glass.
  • Carefully spoon equal amounts of jello mixture on top of creamy cool whip mixture.
  • Put remaining cool whip in piping bag with star tip. Pipe cool whip topping swirl on each cup of raspberry jello delight.
  • Refrigerate for at least 2 hours before serving.

  • In a large bowl, cream butter and sugar until light and fluffy. Beat in egg yolks. Gradually add flour and mix well. 2 tablespoons sugar
3/4 cup cold butter, cubed
FILLING:
1 package (8 ounces) cream cheese, softened
1 cup confectioners' sugar
1 teaspoon vanilla extract
1/4 teaspoon salt
2 cups whipped topping
TOPPING:
2 cups boiling water
2 packages (3 ounces each) raspberry gelatin
2 packages (10 ounces each) frozen sweetened raspberries or sliced strawberries
Additional whipped topping, optional

Steps:

  • Preheat oven to 300° In a large bowl, mix flour and sugar; cut in butter until crumbly. Press onto bottom of an ungreased 13x9-in. pan. Bake until set, 20-25 minutes (crust will not brown). Cool completely on a wire rack., Beat first four filling ingredients until smooth. Fold in whipped topping; spread over crust. , For topping, add boiling water to gelatin; stir 2 minutes to completely dissolve. Add raspberries; stir until blended. Refrigerate until mixture begins to thicken, about 20 minutes. Spoon over filling. Refrigerate until set. If desired, serve with additional whipped topping.

3/4 cup water
2 1/2 cups sugar
1/3 cup corn syrup
8 large egg whites
1 tablespoon lemon juice
1/4 ounce gelatin
4 cups (1 pound) confectioners' sugar
3 1/2 cups all-purpose flour
2 tablespoons ground ginger
12 large egg whites
1/2 cup whole milk
Semisweet chocolate, melted, for dipping tuile
Sponge cake
Raspberry marmalade
Fresh raspberries, for garnish
Superfine sugar
Mint leaves, for garnish

Steps:

  • To make the marshmallow cream. In a small saucepan, combine 1/2 cup of water with sugar and corn syrup, bring to a boil for 5 minutes. In a standing mixer, whip egg whites until they form a soft peak and add the lemon juice. Leaving mixer on high, add the boiling syrup in 3 parts to the egg whites. In a small bowl, dissolve the gelatin with remaining 1/4 cup of water. Add the dissolved gelatin to the mixer, and leave to mix for 3 to 5 minutes. Cover with plastic wrap and set aside.
  • To make the tuile. Preheat oven to 350 degrees F.
  • In the standing mixer, add the confectioners' sugar, flour, ground ginger, egg whites and milk and mix together well. Let batter set for 30 minutes. Using a sturdy plastic disposable plate, cut out a decorative shape in center. On a baking sheet, lined with a silpat or parchment paper, fill the stencil with a thin layer of batter. Remove the stencil, repeat with remaining batter and bake until golden, about 10 minutes. When tuiles are cool enough to handle, but still hot, wrap them loosely around the handle of a wooden spoon. When cool remove shell, melt some semisweet chocolate and dip the ends of the tuile shell in it.
  • Using a biscuit cutter, cut 2 rounds of sponge cake. Place 1 sponge cake round on the bottom of a plate. Spread raspberry marmalade on the sponge cake and place raspberries on top. Put the marshmallow cream in a bag with a # 5 star tip. Make a circle on top of the raspberries. Now repeat the sponge cake series again with the raspberry marmalade spread. Place another layer of fresh raspberries and finish off with marshmallow cream topping. Get a nice raspberry and roll it in super fine sugar. Place it on the center with a mint leaf. Serve with tuiles.

Refreshing dessert, fit for company but easy enough to make for a family dinner. Prep time includes refrigeration for the jello to start to set, I'm guessing it takes around 20 minutes or so. I prefer this recipe with fresh raspberries, but frozen works just as well. The serving size is also an estimate, I used a lasagna pan to make it in and it served 13 last Thanksgiving - it really depends how big you cut the squares.

1 box graham cracker crumbs
1/4 cup butter
1 (2 large) box raspberry Jell-O gelatin
2 1/4 cups hot water
1 box frozen raspberries or 2 cups fresh raspberries
1/2 cup milk
36 large marshmallows
1 cup whipping cream

Steps:

  • Melt 1/4 cup butter in saucepan, add graham cracker crumbs, reserving 3/4 cup of crumbs for garnish.
  • Press mixture into rectangular pan.
  • Bake for 10 minutes at 350 F.
  • Cool.
  • Place contents of two jello boxes in bowl, add 2 1/2 cup hot water.
  • Dissolve and add one box of frozen raspberries, or 2 cups of fresh.
  • Let set until spreading consistancy (soft gel) then pour over graham crust.
  • Dissolve marshmallows in milk over low heat, remove and cool.
  • Whip 1 cup whipping cream and fold into cooled marshmallow mixture.
  • Blend well.
  • Pour over jello section and cover with remaining graham cracker crumbs.
  • Chill until ready to serve.

1 pkg 16 ounce refrigerated sugar cookie dough
1 c white vanilla baking chips or more to cover bottom of crust
FILLING
1 c frozen raspberries, thawed and mashed
1 lb lemon creamy ready to spread frosting
1 pkg 8 ounce cream cheese, softened
1 tsp lemon extract
1 pkg 12 ounce frozen whipped topping, thawed
RASPBERRY SAUCE
2 c raspberries
1 3/4 c water, plus 1 tablespoon
1/3 c sugar
2 Tbsp cornstarch
WHITE CHOCOLATE DRIZZLE
1 c white chocolate chips or white dipping chocolate
1 tsp vegetable oil

Steps:

  • 1. Heat oven to 350 degrees. Grease a 9x13 pan with shortening.
  • 2. Break up the cookie dough into the pan and press evenly on the bottom to form crust.
  • 3. Bake 12-18 minutes or until golden brown. Immediately sprinkle 1 cup of the baking chips evenly over the crust. ( I have substituted white dipping chocolate and shredded it until crust had a nice layer covering it) I thought this chocolate was much better... Let stand 5 minutes. Spread evenly with back of spoon. Cool completely.
  • 4. Stir 1 cup of the raspberries with a fork in a small bowl until broken up and slightly mashed; refrigerate.
  • 5. In a large bowl,, beat frosting, cream cheese and lemon extract with electric mixer until well blended. About 5 minutes. Fold in whipped topping and refrigerate.
  • 6. Spread mashed raspberries over cooled crust. Place in freezer 15 minutes. Spread frosting mixture over raspberries. Refrigerate until set, about 1 hour.
  • 7. To serve, top with raspberry sauce and drizzle with melted white chocolate. Cut into squares. Store in the refrigerator.
  • 8. RASPBERRY SAUCE: In a saucepan, combine raspberries, 1 3/4 cup water and sugar. Bring to a boil. Reduce heat; simmer, uncovered, for 30 minutes.
  • 9. Mash raspberry mixture and strain through a fine sieve into a 2-cup measuring cup; discard seeds. Add water if needed to make 2 cups puree. Return to saucepan.
  • 10. Combine cornstarch and remaining water until smooth, gradually stir into raspberry mixture. Bring to a boil over medium heat, stirring constantly. Cook and stir 1 minute longer. Remove from heat; cool. Store in refrigerator. I put mine in a covered mason pint jar. Makes 2 cups.
  • 11. WHITE CHOCOLATE DRIZZLE In a small resealable freezer plastic bag, place 1 cup white chocolate chips or dipping chocolate cut up or grated and the oil; seal bag.
  • 12. Microwave on high 1 minute. Squeeze bag to mix; microwave in 10 second increments, squeezing after each interval, until chips are melted and smooth. Cut small hole in one bottom of bag; squeeze bag to drizzle mixture over top of the dessert. Cut into squares. Refrigerate.
