½ cup water
1 lemon, juiced
1 tablespoon lemon zest
2 cups frozen sweetened raspberries, thawed
¼ cup sliced fresh ginger
¼ cup white sugar
2 salmon fillets
2 teaspoons olive oil
sea salt to taste
ground black pepper to taste
1 tablespoon lemon zest, divided

Steps:
