1 tablespoon vegetable oil
1 medium yellow onion, finely diced
16 ounces dried pinto beans, rinsed
1 teaspoon ground cumin
1 teaspoon dried oregano
2 garlic cloves, finely chopped
2 bay leaves
1 (7 1/16 ounce) can chipotle chiles in adobo
2 tablespoons fresh lemon juice, from one lemon
2 tablespoons lime juice, from one lime
2 tablespoons kosher salt
1 teaspoon fresh ground black pepper

  • Heat oil in a large heavy-bottomed pot, or dutch oven medium-high.
  • Add onion, beans, cumin, oregano, garlic, bay leaf, 2 chipotle chilies, and 2 teaspoons adobo sauce from the same can. Add enough water to pot to cover beans.
  • Bring to a simmer and cook until beans are tender, but not falling apart. Remove from heat. Remove bay leaves and chipotle chilies. Stir in lemon juice, lime juice, salt and pepper.

4 cups yellow onion (chopped)
4 teaspoons garlic (minced)
2 1/2 teaspoons ground cumin
2 1/2 teaspoons Mexican oregano
2 tablespoons chipotle peppers (chopped)
2 tablespoons adobo sauce
4 cups dried pinto beans (2 pounds)
4 bay leaves
9 cups filtered water
1 tablespoon salt
1 teaspoon black pepper
1/4 cup lime juice
1/4 cup lemon juice
1 tablespoon cilantro (chopped (optional))

Steps:

  • Rinse the dried pinto in a large metal colander and pick out any that you don't want.

1/2 medium red onion, coarsely chopped
2 garlic cloves
1 (7 1/16 ounce) can chipotle chiles in adobo
1 tablespoon chili powder
3 tablespoons vegetable oil, divided
2 teaspoons kosher salt, divided
2 teaspoons ground cumin
2 teaspoons red wine vinegar
1 teaspoon dried oregano
1/4 teaspoon fresh ground black pepper
2 lbs boneless chicken breasts, about 3
1/2 head romaine lettuce, shredded
2 cups salsa
6 flour tortillas (10-inch diameter)
3 cups cooked long-grain rice
