Time 10m

Number Of Ingredients 6

6 oz dark chocolate ((60% or more cocoa chips))
2 oz unsweet chocolate (roughly chopped)
2 oz unsalted, roasted peanuts ((about ½ cup))
2 oz raw, whole almonds (chopped (about ½ cup))
½ cup raisins
½ teaspoon coarse sea salt ( (optional))

Steps:

  • Prep a 8 x 8 pan by lining with parchment paper.
  • Put both types of chocolate in a microwaveable safe bowl. Heat in microwave for 1 min. Remove and stir with spatula. Continue microwaving in 30 second intervals until chocolate is almost all melted (about 1-3 more cycles). Stir vigorously with spatula until chocolate is completely melted and very smooth.
  • Add nuts and raisins to chocolate and stir to combine.
  • Pour chocolate mix into prepared dish and spread out. Chocolate may not fill the entire dish and that's ok. Sprinkle sea salt over top of chocolate.

Time 15m

Yield 10 dozen.

Number Of Ingredients 4

2 pounds white candy coating, coarsely chopped
1 package (12 ounces) semisweet chocolate chips
1 package (11-1/2 ounces) milk chocolate chips
5 cups salted dry roasted peanuts

Steps:

  • In a heavy saucepan over low heat, cook and stir candy coating and chips until melted and smooth. Cool for 10 minutes; stir in peanuts., Drop by rounded tablespoonfuls onto waxed paper-lined baking sheets. Refrigerate until firm, about 45 minutes.

Nutrition Facts :

Tips:

  • Use high-quality chocolate for the best flavor. A good semisweet or bittersweet chocolate is a good choice.
  • To get the perfect crunch, make sure to use fresh peanuts. Avoid using stale or old peanuts, as they will not provide the same level of crunch.
  • If you don't have a candy thermometer, you can use the cold water test to check the temperature of the chocolate. Drop a small amount of the chocolate into a bowl of cold water. If the chocolate forms a firm ball, it is ready.
  • Work quickly when dipping the peanuts in the chocolate. The chocolate will start to set quickly, so it is important to work quickly to avoid the chocolate becoming too thick.
  • Place the chocolate-covered peanuts on a parchment paper-lined baking sheet. This will help to prevent the chocolate from sticking to the pan.

Conclusion:

These Copycat Chunky Bar Clusters are a delicious and easy-to-make treat that is perfect for any occasion. They are sure to be a hit with family and friends. So next time you are looking for a sweet treat, give this recipe a try. You won't be disappointed!
