Time 2h10m

Number Of Ingredients 3

16 oz. high quality dark chocolate (I use the large Lindt dark chocolate bars)
1/4 cup Spanish peanuts (chopped)
1/2 cup Spanish peanuts (whole)

Steps:

  • Break the chocolate into pieces. Melt the chocolate in a double boiler over simmering water, stirring frequently with a spatula. (You can use a metal or heat-proof glass bowl that fits on top of a pot.) Alternatively, you can microwave the chocolate in a microwave-safe bowl at 20 second intervals, stirring each time until fully melted.
  • Take the bowl of chocolate off the heat. Stir in the chopped and whole peanuts. Mix well.
  • Pour the chocolate mixture into the mold, filling the cavities (only about half way up if you're using the suggested mold below).
  • Let the chocolate cool and set for at least 2 hours, until solid.
  • When the chocolate bars are solid, carefully remove them from the mold.
  • Serve and enjoy! These can be stored in an airtight container in a cool, dry place. If you are giving them as a gift, you can even wrap them in colored foil squares to make them look like legit chocolate bars.

CUBAN LUNCH CANDIES

I'm not sure where the name comes from, but these little treats are a snap to make and look really good on a Christmas sweets platter. I got the recipe from my friend Melanie, who brought these to my Christmas baking exchange. Cook time is chill time.

Time 20m

Yield 80 pieces

Number Of Ingredients 5

2 cups peanut butter chips
2 cups butterscotch chips
2 cups chocolate chips
1 1/2 cups crushed ripple potato chips
1 1/2 cups peanuts (salted or unsalted)

Steps:

  • Melt together the peanut butter, butterscotch and chocolate chips in top of double boiler.
  • Add crushed potato chips and peanuts.
  • Mix together with melted chips.
  • Spoon into mini cupcake paper cups.
  • (You do not even have to put these into mini muffin pans as they do hold their shape while they are being filled. It is best to put the mini cupcake papers on a plain cookie sheet to make them easier to move before chilling.) Chill until set.
  • You can also add ½ cup coconut to melted chips and peanuts.
  • To speed up chilling time, pop them into the freezer for a few minutes.

CUBAN LUNCH

Just like cuban lunch chocolate bars, for those old enough to remember. A friend gave me this recipe and now its a family favorite.

Provided by shawn eide

Categories     Chocolate

Number Of Ingredients 5

1 pkg chocolate chips
1 pkg butterscotch chips
1 pkg peanut butter chips
1 family sized bag ripple potato chips
2 c peanuts

Steps:

  • 1. melt all three chips together. Crush the potato chips and add these and the peants to chip mixture. Place in paper lined muffin tine. I used the big ones. Just like the cuban lunch bars, For those old enough to remember them. Enjoy

Tips:

  • For the best results, use a food processor to finely chop the onion and garlic.
  • If you don't have a food processor, you can mince the onion and garlic by hand, but be sure to do it very finely.
  • Be sure to use fresh parsley for the best flavor.
  • If you don't have any fresh parsley, you can use dried parsley, but be sure to use only 1/4 teaspoon.
  • If you like a little heat, you can add a pinch of cayenne pepper to the ground beef mixture.
  • Be sure to cook the ground beef mixture until it is browned all the way through.
  • Don't overcook the ground beef mixture, or it will become dry and tough.
  • Be sure to let the ground beef mixture cool slightly before adding it to the bread dough.
  • If the ground beef mixture is too hot, it will kill the yeast in the bread dough and prevent it from rising.
  • Be sure to knead the bread dough until it is smooth and elastic.
  • If the bread dough is too sticky, you can add a little more flour.
  • Be sure to let the bread dough rise in a warm place until it has doubled in size.
  • If the bread dough doesn't rise, it may be because the yeast is old or inactive. You can test the yeast by dissolving it in a little warm water with a pinch of sugar. If the yeast is active, it will start to foam after a few minutes.
  • Be sure to bake the Cuban lunch squares until they are golden brown.
  • If the Cuban lunch squares are too brown, they will be dry and overcooked.
  • Let the Cuban lunch squares cool slightly before serving.
  • Serve the Cuban lunch squares with your favorite dipping sauce.

Conclusion:

Cuban lunch squares are a delicious and easy-to-make snack or meal. They are perfect for parties, potlucks, or picnics. They are also a great way to use up leftover ground beef. With a few simple ingredients and a little time, you can make these tasty treats at home. So next time you're looking for a quick and easy snack or meal, give Cuban lunch squares a try.
