1 cup brown sugar
3 Tablespoons butter
1 teaspoon vanilla
1 cup sugar
1 cup flour
2 teaspoons baking powder
1 teaspoon salt
1 teaspoon vanilla
1 cup chopped dates (seeds removed)
1/2 cup milk
1/2 cup chopped nuts (optional)

Steps:

  • Spray a 9 x 5 inch pan (bread pan) with nonstick cooking spray. Preheat oven to 300 degrees F.
  • For the sauce, boil together water, brown sugar and butter for 3 minutes in a small saucepan; add vanilla and take off heat to slightly cool while putting together pudding.
  • In a mixing bowl, combine sugar, flour, baking powder, and salt; add milk, chopped dates and vanilla. Mix together until a thick, sticky batter forms.

This recipe dates back to the early 1900's. It came fdrom my grandmother's aunt. The family often served this for Christmas. Its a very rich, old fashioned pudding served with whipped cream. The sauce bakes on the bottom.

4 tablespoon(s) butter
1 cup(s) milk
1 cup(s) brown sugar, firmly packed
1 pound(s) chopped dates
1 cup(s) chopped nuts

1/2 teaspoon(s) cinnamon

Steps:

  • Preheat oven to 350 degrees. In a small saucepan mix sugar, water, and butter. Cook until it comes to a boil. Pour into a 9 by 13 inch pan. 1 cup hot water
1 teaspoon baking soda
1 cup white sugar
2 tablespoons butter
1 egg
1 1/2 cups flour
1 teaspoon baking powder
1/2 cup pecans
1 cup brown sugar
2/3 cup water
2/3 cup chopped dates

Steps:

  • Mix together 1 cup dates, 1 cup hot water and baking soda. Let stand several minutes.

1 1/2 teaspoons bicarbonate of soda
1 teaspoon grated fresh ginger
90 g butter
1 cup caster sugar
3 eggs
1 1/2 cups self-raising flour
1/4 teaspoon ground cloves
1/2 teaspoon mixed spice
creme fraiche or whipped cream, for serving
100 g butter
1 cup soft brown sugar
1/3 cup golden syrup
3/4 cup thickened cream

Steps:

  • Preheat oven to 180oC.
  • Grease and line the base of 23cm deep round cake tin.
  • Put the dates in a pan with 1 3/4 cups water, bring to the boil then remove from the heat.
