I googled and found this recipe, then tweaked it a little bit. We tried it tonight and it's a very tasty dish. I am a new cook, so what I like about the recipe itself is that there's a little more to it than just throwing everything in there. It's simple, and it makes it more fun than other crock pot dishes.

Time 5h5m

Yield 6-8 serving(s)

4 chicken breasts, frozen
1 (15 ounce) can corn
1 (7 ounce) can creamed corn
1 (15 ounce) can diced tomatoes
1 (15 ounce) can tomato sauce
4 potatoes, quartered

2 tablespoons chicken bouillon concentrate
1 tablespoon butter
1 tablespoon garlic powder
1 teaspoon black pepper

Steps:

  • Lay chicken breasts on bottom of crock pot.
  • Pour everything else over the top and stir (without moving the chicken).
  • Cook on low 8-10 hours or high 4-6 hours (I actually cooked it on medium for about 5 hours).
  • If you're home, stir once in a while, as the chicken and potatoes soften, to break them up a bit, though it will probably also work to do that when it's all done.

Time 7h20m

Yield 1 pot of soup, 4 serving(s)

Number Of Ingredients 10

olive oil
2 cups fresh corn kernels (may sub frozen, thawed corn, if desired)
1 red bell pepper, cored, seeded and diced
2 green onions, diced
4 cups chicken broth
2 baking potatoes, peeled and diced
1 teaspoon salt
1/2 teaspoon fresh ground black pepper
1 (13 ounce) can evaporated milk
2 tablespoons flat leaf parsley, minced

Steps:

  • Heat olive oil in saute pan over medium heat. Add the corn, red pepper, and onions. Saute the vegetables until they are tender and lightly browned, about 7-8 minutes.
  • Transfer sauted vegetables to slow cooker. Add the green onions, broth, potatoes, salt and pepper, and stir to combine. Cover and cook on Low for 7-9 hours or on High for 4-5 hours.
  • Thirty minutes prior to serving, add the milk and blend well. Garnish with parsley to serve.

Tips:

  • Start by preparing the vegetables: mince the garlic and onion, chop the celery and carrots into small pieces, and dice the potatoes into 1-inch cubes.
  • Use a large pot or Dutch oven to sauté the vegetables in butter over medium heat until softened. This step adds flavor and depth to the chowder.
  • When adding the corn, use a combination of fresh, frozen, and/or canned corn for a variety of textures and flavors.
  • Be sure to rinse and drain the canned corn before adding it to the pot. This will remove the excess sodium and starch, resulting in a cleaner flavor.
  • Add a variety of seasonings to enhance the flavor of the chowder, such as salt, pepper, paprika, thyme, and bay leaves.
  • For a creamier chowder, use a combination of milk and heavy cream. Alternatively, you can use all milk or all heavy cream, depending on your preference.
  • To thicken the chowder, add a cornstarch slurry made from equal parts cornstarch and water. Stir it into the simmering chowder until it reaches your desired consistency.
  • Serve the chowder hot with a sprinkle of fresh parsley or chives for garnish.

Conclusion:

Corn chowder is a delicious and versatile dish that can be enjoyed for lunch or dinner. With its creamy texture, hearty vegetables, and savory seasonings, it's a comfort food classic that is sure to please everyone at the table. Whether you prefer a traditional recipe or a more modern twist, there are endless possibilities for creating a delicious corn chowder that will warm your soul.
