AVOCADO AND CORN SALSA

Avocado and Corn Salsa image

Provided by Steven Raichlen

Yield Makes 2 to 3 cups

Number Of Ingredients 8

1 ripe avocado, cut into 1/4-inch dice
2 to 3 tablespoons fresh lime juice
1 ripe red tomato, seeded and cut into 1/4-inch dice
1 ear sweet corn, shucked
1 scallion, both white and green parts, trimmed and finely chopped, or 3 tablespoons diced sweet onion
1 to 2 jalapeño peppers or serrano peppers, seeded and minced (for a hotter salsa, leave the seeds in)
1/4 cup chopped fresh cilantro
Coarse salt (kosher or sea) and freshly ground black pepper

Steps:

  • 1. Place the avocado in the bottom of a nonreactive mixing bowl and gently toss it with 2 tablespoons of the lime juice. Spoon the tomato on top of the avocado.
  • 2. Cut the kernels off the corn. The easiest way to do this is to lay the cob flat on a cutting board and remove the kernels using lengthwise strokes of a chef's knife. Add the corn kernels to the mixing bowl. The salsa can be prepared to this stage up to 2 hours ahead. Refrigerate it, covered.
  • 3. Just before serving, add the jalapeño(s) and cilantro to the mixing bowl and gently toss to mix. Taste for seasoning, adding more lime juice as necessary and season with salt and pepper to taste; the salsa should be highly seasoned.

Tips:

  • Choose the right corn: Fresh corn on the cob is best for this salsa, but you can also use frozen or canned corn. If using frozen corn, thaw it before using. If using canned corn, drain and rinse it before using.
  • Roast the corn: Roasting the corn adds a smoky flavor that complements the other ingredients in the salsa. To roast the corn, preheat your oven to 400 degrees Fahrenheit. Husk the corn and remove the silk. Drizzle the corn with olive oil and season with salt and pepper. Roast the corn for 20-25 minutes, or until it is tender and slightly charred.
  • Use ripe avocados: Ripe avocados are creamy and flavorful, and they add a nice contrast to the other ingredients in the salsa. To choose a ripe avocado, look for one that is dark green or black in color and slightly soft to the touch.
  • Chop the ingredients evenly: This will help to ensure that the salsa has a consistent texture. If you are using a food processor to chop the ingredients, be careful not to over-process them. You want the salsa to have some texture, so don't puree it completely.
  • Season to taste: Once you have combined all of the ingredients, taste the salsa and adjust the seasonings as needed. You may want to add more salt, pepper, lime juice, or cilantro.

Conclusion:

Corn salsa with avocado is a refreshing and flavorful salsa that is perfect for any occasion. It is easy to make and can be tailored to your own taste preferences. Whether you are serving it with chips, tacos, or burritos, this salsa is sure to be a hit. So next time you are looking for a quick and easy appetizer or side dish, give this corn salsa with avocado a try. You won't be disappointed!
