QUICK AND EASY SALSA WITH BLACK BEANS AND CORN

Quick and Easy Salsa With Black Beans and Corn image

Yesterday was my turn to bring snacks to my Cuban salsa class -- the dance that is. After scanning dozens of recipes, I couldn't find what I wanted so I created this one. After watching my classmates tip the bowl, I decided it was worth posting. While the ingredients are familiar, the ratio of tomatoes, beans and corn is quite different from the dozens already here. So easy, its a crowd pleaser.

Tips:

  • Use fresh, ripe corn: Fresh corn has a sweeter and more flavorful taste than canned or frozen corn.
  • Choose the right type of black beans: There are two main types of black beans: regular black beans and black turtle beans. Either type can be used in this recipe, but black turtle beans hold their shape better and have a slightly nuttier flavor.
  • Don't overcook the corn: Overcooked corn becomes tough and chewy. Cook it just until it is tender-crisp.
  • Use a sharp knife to dice the vegetables: This will help to ensure that the vegetables are evenly diced and will cook evenly.
  • Don't be afraid to experiment with different ingredients: This recipe is a great starting point, but you can add or omit ingredients to suit your taste. For example, you could add chopped cilantro, diced avocado, or a squeeze of lime juice.

Conclusion:

This corn salsa with black beans is a delicious and versatile dish that can be served as an appetizer, side dish, or main course. It is easy to make and can be tailored to your own taste. So next time you are looking for a healthy and flavorful dish, give this corn salsa a try!
