3/4 cup chopped sweet onion
3 tablespoons olive oil
2 garlic cloves, minced
3 medium zucchini, quartered lengthwise and sliced
1 plum tomatoes, seeded and chopped
1 can (15-1/4 ounces) whole kernel corn, drained
1/4 cup water
1 tablespoon dried parsley flakes
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 cup shredded cheddar cheese

2 large ears corn
2 Tbsp olive oil (or canola oil)
3 small-medium firm zucchini, quartered lengthwise and diced
1 onion, chopped
3-4 garlic cloves, chopped
1 Tbsp chili powder (such as gebhardt)
1 Tbsp cumin
salt and pepper
1 15-oz. can black beans, rinsed and drained
2-3 c vegetable stock
1 14.5 oz. can diced tomatoes
1 rounded tsp. honey or light agava
small handful of cilantro, chopped
1 lime, juiced (about 2 tbsp.)
optional toppings: pickled jalapeno slices, diced avocado, sliced scallions, crushed tortilla chips, crumbled cotija, monterrey jack or queso fresco

  • 1. Working over an open flame on a gas burner or under the broiler of the oven, cook the chiles, turning until charred all over. Place in a bowl and cover with plastic wrap until cool enough to handle, about 15 minutes. Peel, seed and dice the chiles.
