1 large egg, lightly beaten

4 bone-in pork chops (1 inch thick; about 10 ounces each)
2 tablespoons vegetable oil
1 1/4 pounds green beans, trimmed
3 tablespoons unsalted butter
1 tablespoon all-purpose flour

Steps:

  • Preheat the oven to 400 degrees F. Combine the parsley, scallions, jalapeno, cornbread, egg, 1/2 teaspoon salt and a few grinds of pepper in a bowl. Cut a deep 2-inch-wide pocket into the side of each pork chop. Stuff the cornbread mixture into the pockets.

Four 5- to 6-ounce bone-in pork chops, preferably center cut
Kosher salt and freshly ground black pepper
3 cups buttermilk
2 tablespoons hot sauce
3 cups finely crumbled cornbread
1 quart vegetable oil
2 tablespoons unsalted butter
1/4 cup all-purpose flour
2 cups whole milk
1 teaspoon hot sauce
2 tablespoons chopped fresh flat-leaf parsley

Steps:

  • Preheat the oven to 300 degrees F. Line a baking sheet with parchment paper and top with a cooling rack.
  • Sprinkle both sides of the pork chops liberally with salt and pepper. Combine the buttermilk and hot sauce in a large mixing bowl. Put the pork chops in the buttermilk mixture, being sure that all 4 are submerged. Set aside to rest for 30 minutes. Meanwhile, put the cornbread crumbs into a shallow dish.

Sprinkle the chops with additional salt and transfer to the oven to stay warm while the remaining chops are fried. Repeat this process with the remaining pork chops.
  • For the white gravy: Reserve 2 tablespoons of skillet oil for the gravy, then drain the remaining oil from the skillet, being sure to remove any bits of fried cornbread left behind. Add the butter to the skillet, pour in the reserved oil and heat over medium heat until the butter melts. Sprinkle in the flour, whisking, and cook until a smooth paste is formed, about 1 minute. 4 bone-in center-cut pork chops (each 10 to 12 ounces and 1 inch thick)
1/4 to 1/2 cup Cornbread Stuffing
Coarse salt and ground pepper
1 tablespoon canola oil
1 can (14.5 ounces) reduced-sodium chicken broth

Steps:

  • Using a sharp paring knife, make a 2-inch incision in each pork chop, cutting inside pocket all the way to the bone. Using a small spoon, fill each pocket with about 2 tablespoons cornbread stuffing. Press down on top of chops to flatten. Season with salt and pepper.
  • Heat oil in a 12-inch skillet over high heat. Add pork chops; sear until browned, 3 to 4 minutes per side. Add 1/2 can chicken broth, and reduce heat to medium-low. Cover, and simmer until stuffing is heated through, 3 to 8 minutes. Use a slotted spatula to remove chops.

I first cooked these in the early 90's when I belonged to a cooking school and they're great! Make sure your guests are hungry: this is a very hearty entree. Recipe #320348 makes a really good side dish. I cook them with apple juice - just haven't gotten around to trying them with wine. Note: The recipe is easily modified for thinner chops by reducing the browning and baking times.

4 slices day old bread, trimmed of some crust, cut in 1/4-inch cubes
1/4 cup butter or 1/4 cup margarine
1/2 cup onion, finely chopped
1/2 cup celery, finely chopped
2 tablespoons parsley, chopped
1/2 cup dark raisin
1 1/2 teaspoons salt
1 teaspoon dried marjoram
1/8 teaspoon pepper
6 pork chops, 1 1/2-inch thick (each about 3/4 pound)
1/4 cup flour
1 teaspoon salt
2 tablespoons butter or 2 tablespoons margarine
1 cup white wine or 1 cup apple cider

Steps:

  • Melt 1/4 cup butter in a large skillet over medium high heat and saute the chopped onion and celery, stirring, until onion is golden, about 5 minutes. Remove skillet from heat. Gently stir in bread cubes. Add parsley, raisins, 1 1/2 teaspoons salt, marjoram and pepper; toss lightly to combine. Set aside.
  • Preheat oven to 350°F Trim excess fat from chops, reserving the fat. Using a sharp paring knife, cut a pocket in each chop, all the way to the rib. Fill each pocket with 1/4 cup stuffing; fasten together with a couple of toothpicks.
  • Mix together the 1/4 cup flour and 1 teaspoon salt. Lightly coat the pork chops on both sides with flour mixture, reserving remaining seasoned flour for gravy.
  • Heat 2 tablespoons butter and reserved pork fat in a large skillet. Over low heat, cooking 3 at a time, brown chops well on both sides, turning with tongs, 8-10 minutes on each side or until browned. Remove each batch of browned chops to paper towels.
  • Pour off fat from skillet, and add apple juice, white wine, cider or a combo of liquids to skillet. Stir over medium heat to dissolve browned bits. Pour into the bottom of roasting pan. Stand chops bone-side down in bottom of pan. Cover with foil and bake in preheated oven 1 hour.
  • Uncover and bake 30 to 40 minutes, or until tender. Remove chops to platter and tent with foil to keep warm.
  • Optional Gravy: Over medium heat boil drippings, uncovered, until reduced to 1 cup. Dissolve reserved flour mixture in 1/2 cup of water. Add to drippings and bring to a boil, stirring; simmer 3 minutes. Taste and adjust seasonings. Strain if necessary. Serve with chops.

  • Preheat oven to 400 degrees. Brush an 8-inch square baking dish with oil. In a medium bowl, whisk together cornmeal, 1 cup flour, baking powder, and 3/4 teaspoon salt. This main dish is one of my family's favorites. It's fantastic for holiday get-togethers, because it looks just as good as it tastes!

1/4 cup boiling water
1/4 cup raisins
2 bacon strips, chopped
1/2 cup diced celery
2 tablespoons diced onion
1 large egg, beaten
1 teaspoon salt
1/4 teaspoon pepper
2-1/2 cups corn bread crumbs
6 bone-in pork loin chops (1-1/4 inches thick) or 1 pork shoulder butt roast (3 to 4 pounds), boned for stuffing

Steps:

  • Pour water over raisins; set aside. In a saucepan, cook bacon until crisp; add celery and onion. Cook and stir for 2 minutes; remove from the heat. In a small bowl, combine the egg, salt, pepper and bacon and raisin mixtures. Add crumbs and toss lightly. , If stuffing pork chops, cut a pocket in each chop by slicing from the fat side almost to the bone. Spoon about 1/3 cup stuffing into each chop; place on a rack in a shallow roasting pan. Bake at 375° for 40-50 minutes or until meat is no longer pink. , If stuffing a roast, fill pocket in roast with stuffing. Tie roast with string and place on a rack in a shallow roasting pan. Roast at 325° for 1-3/4 to 2-1/4 hours or until a thermometer reads 160°. Cover and let stand 10 minutes before carving.

Cornbread Stuffed Pork Chops image

This recipe came about when I had both some left over cornbread and some nice thick porkchops. It is a winner in my books.

4 - 1 1/2 inch thick center cut pork chops
2 cup(s) crumbled cornbread
1/4 cup(s) butter
1/2 cup(s) chopped onion
1/4 cup(s) chopped celery
1/4 cup(s) chopped bell pepper, red or green or both
1 clove(s) garlic, minced
1/2 cup(s) mushrooms, chopped
1/4 cup(s) parsley
1 tablespoon(s) each fresh thyme, sage and basil (if using dried, use 1 tsp each)
- chicken broth or water
1 can(s) cream of mushroom soup
- salt and pepper to taste

Steps:

  • Cut a slit through the center of the chops, down to the bone, to form a pocket. (Sometimes you can get butterfly porkchops which work well. Or have the butcher cut the pocket for you.)
  • Crumble cornbread roughly into a medium mixing bowl and set aside.
  • In a medium saute pan, melt the butter and add onion, celery, peppers, mushrooms and garlic. Saute til soft and lightly browned and most of the liquid is reduced. Add Parsley and herbs, stir and cook about 1 minute more.
  • Place the sauteed veggies in the bowl with the cornbread and mix together. You will need to add enough chicken broth or water to moisten. This depends on the amount of liquid in the veggies and the dryness of the cornbread.
  • Preheat oven to 350 degrees
  • Season the chops with salt and pepper inside and out. Place stuffing into the pockets. There will usually be some left over but stuff them pretty full. If you prefer, stuff lightly and then bake the remaining stuffing alongside the chops in a separate oiled casserole during the last 20-30 minutes of cooking time.
  • Place stuffed chops in a 9x13 baking dish. Place soup in a small bowl (or use the bowl you mixed the stuffing in) and add a few tablespoons of broth or water to thin it down and then spoon over the chops.
  • Bake 1 to 1 1/2 hrs or til tender, check after about an hour. Temp should be 160-165 inside the stuffing. Place the extra pan of stuffing in the oven when the chops start to feel tender.
  • Spoon some of the gravy over the chops and stuffing for serving and pass any extra gravy on the side.

Tips:

  • Pork chops should be at least 1-inch thick for best results.
  • Use a sharp knife to cut a pocket into the pork chops. Be careful not to cut all the way through.
  • Season the pork chops generously with salt and pepper before stuffing them.
  • Use a variety of vegetables and herbs in the stuffing. This will add flavor and texture to the pork chops.
  • Don't overstuff the pork chops. You want the stuffing to be able to expand as the pork chops cook.
  • Sear the pork chops in a hot skillet before baking them. This will help to seal in the juices.
  • Bake the pork chops in a preheated oven until they are cooked through. The internal temperature should reach 145 degrees Fahrenheit.
