CORNFLAKE ENERGY BITES

Loved the sound of these as a lunch box treat, found on Sanitarium.com.au, I used dried nectarines and pineapple in place of prunes and apricots. Best used within a few days before they go too soft.

NO-BAKE ENERGY BITES

No-Bake Energy Bites image

This is a healthy take on the traditional no bake cookies. So good and good for you! I am always asked for this recipe every time I make them. They are a hit with the kids and the adults, and always go quick! I store them in the freezer because I think they taste best frozen, but not necessary.

ENERGY BITES (MOCK LARABAR)

Energy Bites (Mock Larabar) image

Energy bars like Larabars are expensive ($1.75/bar) to buy. But you can easily make them using healthy ingredients. I made mine into small bites, vs. a bar. You can vary the ingredients using chopped dates, dried cherries or raisens or whatever dried fruit you have on hand. Yesterday at Costco I bought dried spiced apples and cranberries for under $3. I also buy my dried blueberries at Costco. Enjoy!

Tips:

  • Use a food processor: This will make it much easier to blend the ingredients together until they are smooth.
  • Don't over-process the mixture: You want the mixture to be slightly chunky, so that you can still see some of the oats and nuts.
  • Use a variety of ingredients: This will make your energy bites more flavorful and interesting. Some good options include oats, nuts, seeds, dried fruit, and honey.
  • Make sure the mixture is sticky: If the mixture is too dry, it will be difficult to form into balls. Add a little more honey or peanut butter if necessary.
  • Chill the mixture before forming the balls: This will make it easier to handle and will help the balls hold their shape.
  • Coat the balls in your favorite toppings: This is a great way to add extra flavor and texture. Some good options include chopped nuts, seeds, or dried fruit.

Conclusion:

Cornflake energy bites are a delicious and healthy snack that are perfect for on-the-go. They are easy to make and can be customized to your liking. With a little creativity, you can create energy bites that are both tasty and nutritious. So next time you are looking for a healthy snack, give cornflake energy bites a try!
