butter flavored cooking spray
¼ cup yellow cornmeal
¼ cup panko bread crumbs
½ teaspoon garlic salt
¼ teaspoon ground black pepper

  • Preheat an oven to 375 degrees F (190 degrees C). Place a baking rack on top of a baking sheet or sheet pan.
  • Cook the frozen okra in the microwave using your microwave's frozen vegetable setting, or on high for 8 minutes. Drain and cool on paper towels, about 5 to 10 minutes.   • In a large, heavy-bottomed pan, heat the vegetable oil over medium heat until a deep-frying thermometer inserted in the oil reaches 350 degrees F.
