CORNBREAD

I love tasting different cornbread recipes, and I have to admit, I think this is the best that I've ever tasted. Usually I have to put tons of butter on it, because it's so dry and just doesn't have much taste to it, but this recipe is very moist, and you can eat it alone, it's got a great sweet taste to it. Try it...and let me know what you think. Thanks to Betty Crockers Big Red Cookbook for this great recipe.

CLASSIC CORNBREAD

Classic Cornbread image

This cornbread strikes the right balance between tender and crumbly. To use it in a Thanksgiving stuffing, reduce the sugar to 2 tablespoons.

Provided by Martha Stewart

Categories     Food & Cooking     Breakfast & Brunch Recipes     Bread Recipes

Time 30m

Number Of Ingredients 9

1/2 cup (1 stick) unsalted butter, melted, plus more for pan
1 1/2 cups yellow or white cornmeal
1 cup all-purpose flour (spooned and leveled)
6 tablespoons sugar
1 1/2 teaspoons baking powder
1 teaspoon fine salt
1/2 teaspoon baking soda
1 cup buttermilk
3 large eggs

Steps:

  • Preheat oven to 400 degrees. Butter an 8-inch square baking pan. In a large bowl, stir together cornmeal, flour, sugar, baking powder, salt, and baking soda. In a medium bowl, whisk together melted butter, buttermilk, and eggs. Add buttermilk mixture to flour mixture and stir just until combined (do not overmix). Transfer batter to pan and smooth top.
  • Bake until a toothpick inserted in center comes out clean, 20 to 25 minutes. Let cool in pan on a wire rack, 15 minutes, before serving.

Tips:

  • Choose the right cornmeal: Use a good quality, stone-ground cornmeal for the best flavor and texture. Fine or medium-ground cornmeal will work well. Avoid using corn flour, as it will produce a gritty texture.
  • Use buttermilk: Buttermilk adds a slight tang and richness to the cornbread. If you don't have buttermilk, you can make your own by adding 1 tablespoon of vinegar or lemon juice to 1 cup of regular milk and letting it sit for 5 minutes.
  • Don't overmix the batter: Overmixing the batter will make the cornbread tough. Stir just until the ingredients are combined.
  • Bake the cornbread in a hot oven: A hot oven will help the cornbread rise and develop a crispy crust. Preheat the oven to at least 400°F (200°C) before baking.
  • Don't overbake the cornbread: Overbaking the cornbread will make it dry and crumbly. Bake it just until a toothpick inserted into the center comes out clean.

Conclusion:

Cornbread is a versatile and delicious bread that can be enjoyed in many different ways. It can be served as a side dish with chili, soup, or stew, or it can be used to make sandwiches, croutons, or stuffing. With its simple ingredients and easy preparation, cornbread is a great choice for any meal.
