11/2 c cracker crumbs
1 lb ground beef
1 lb ground pork
6 oz tomato paste
2 eggs, beaten
1 medium sweet onion, chopped fine
1 medium red bell pepper, chopped fine
1 1/2 c cottage cheese, small curd
6-8 oz mushrooms, fresh, chopped
1/4 tsp oregano, dried
1 tsp parsley flakes
1/2 tsp garlic powder
1 c mozzarella , shredded

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. In large bowl, combine 1 cup cracker crumbs, with pork, beef, eggs, tomato paste, onion, red pepper, garlic powder, oregano, salt and pepper.
  • 3. Put half of mixture in an 8X8 baking pan.
  • 4. In another bowl, combine cottage cheese, mushroom pieces, remaining cracker crumbs, parsley, and cheese. Spread over meat mixture in pan.
  • 5. Top with the remaining meat mixture. Note: You can mix 1/4 cup ketchup with 1 teaspoon Worchester, and 2 TBLs brown sugar together and top off meat loaf if you prefer a glaze. Bake at 350 degrees for 1 hour.

1 egg
1 pound lean ground beef
1/2 cup cottage cheese
1/2 onion, minced
1/2 cup cracker crumbs
1/4 cup minced celery
1/4 cup minced green bell pepper
2 tablespoons toasted sesame seeds
1/2 clove garlic, crushed
1 tablespoon Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon dried basil
1/2 teaspoon pepper
1/4 cup ketchup
2 teaspoons brown sugar
2 teaspoons prepared mustard

Steps:

  • Heat the oven to 350 degrees.
  • Beat the egg lightly in a large bowl. Crumble the beef and add to the bowl, along with the cottage cheese, onion, cracker crumbs, celery, green pepper, sesame seeds, garlic, Worcestershire sauce, salt, basil and pepper. Toss lightly with your hands to mix; do not overmix. Shape the loaf and place in a (9x5-inch) loaf pan.
  • Combine the ketchup, brown sugar and mustard. Spread over the loaf.
  • Bake the meatloaf until the internal temperature reaches 160 degrees on a meat thermometer and the loaf pulls away from the sides of the pan, about 1 hour. Let stand 10 minutes before slicing.

The recipe comes from the Sunset Ground Beef Cookbook 1968 and has been one of our all-time favorite meatloaf recipes because of the taste as well as how quickly everything is put together and baked. To up the taste I have included 1 clove of garlic minced. It's a very light textured meatloaf in a shallow pan instead of the typical loaf pan style. I am mostly putting this recipe here for safekeeping since my book is getting more and more stained after 4 decades of use. I normally eat this meatloaf with a side of ketchup and I suppose I should come up with a topping that goes on before Parmesan cheese but haven't done that yet. There is already a very similar recipe posted on zaar that uses a microwave to cook the meat.

1 cup cottage cheese
1 egg
1/2 cup quick-cooking rolled oats
1/4 cup ketchup
1 tablespoon prepared yellow mustard
2 tablespoons onions, minced
1 garlic clove, minced
