These are an old favorite of mine. I use small-curd, low-fat cottage cheese. They come out thin and delicate, somewhere between a classic pancake and a crepe. A nice addition to a reduced-carb diet.

COTTAGE CHEESE PANCAKES

A breakfast of cottage cheese with ketchup and pepper might seem scandalous to some, but to President Nixon it was standard morning fare. The cottage cheese in these flapjacks adds nice texture and an old-fashioned flavor reminiscent of blintzes. If you want to top them with something red, I suggest strawberry syrup.

EASY COTTAGE CHEESE PANCAKES

Easy Cottage Cheese Pancakes image

A simple brunch dish, savory side, or main dish that can be varied to taste. I enjoy eating cottage cheese pancakes with Indian-inspired toppings, sometimes spiced with curry or ginger, and with chutney and a sour pickle on the side. Add fry bread and a bean salad for a full meal. Feel free to add any spice, fruit puree, seeds, dried fruit, bits of meat or cheese, beans, or condiments to the batter, between 1 tablespoon and 1/2 cup.

Categories     dinner, main course

Time 45m

Yield 16 to 18 pancakes

Number Of Ingredients 13

6 ounces (170 grams) cauliflower (florets only)
1 cup (250 grams) low-fat cottage cheese
3/4 cup low-fat milk (1 percent or 2 percent) milk

2 tablespoons chopped chives (optional)
Butter or oil for cooking

Steps:

  • Place the cottage cheese in a sieve and drain for 15 minutes
  • Steam the cauliflower for 5 minutes, remove from the heat and chop fine. Set aside
  • In a medium bowl, beat together the cottage cheese, milk, egg yolks and flaxseeds with soaking water. In another bowl, sift together the flour, baking powder, salt and garam masala. Stir in the nigella seeds
  • Combine the dry and wet ingredients and whisk together. Fold in the cauliflower, carrot and chives

EASY HEALTHY COTTAGE CHEESE PANCAKES

Easy Healthy Cottage Cheese Pancakes image

Savory pancake, great any time of the day. I adore Sharon123's cottage cheese pancakes (#348917), so I modified it to something I can feel good about eating almost every day. I love to sprinkle a little bit of sea salt on these after they're done, and eat them with additional fat-free cottage cheese. My husband likes them with sugar-free pancake syrup. Sometimes I use butter instead of the cooking spray, but obviously that changes the calories a bit. ;)

COTTAGE CHEESE, BLUEBERRY PANCAKES

Cottage Cheese, Blueberry Pancakes image

Make and share this Cottage Cheese, Blueberry Pancakes recipe from Food.com.

Provided by Lightlove

Categories     Breakfast

Time 30m

Yield 1 serving(s)

Number Of Ingredients 8

1/3 cup old-fashioned oatmeal
1/4 cup blueberries
3 tablespoons egg whites
1 tablespoon nonfat milk
1 tablespoon fat-free cottage cheese
1 tablespoon flour
2 tablespoons water
1 pinch salt

Steps:

  • Combine all ingredients except for the blueberries and stir until well mixed. Gently fold in blueberries.
  • In a skillet sprayed with nonstick spray, drop batter into pan to form 3 pancakes (or 1 big pancake). Once pancakes begin to look solid (about 3 minutes), gently flip (if possible, re-spritz the pan with nonstick spray as you flip 'em to prevent sticking). Cook for approximately 3 additional minutes, or until both sides are lightly browned and insides are cooked through.

Tips:

  • Use fresh cottage cheese for the best results. If using store-bought cottage cheese, make sure to drain it well before using.
  • If you don't have buttermilk, you can make your own by adding 1 tablespoon of lemon juice or vinegar to 1 cup of milk. Let it sit for 5 minutes before using.
  • Don't overmix the batter. Overmixing will make the pancakes tough.
  • Cook the pancakes over medium heat. If the heat is too high, the pancakes will burn on the outside before they're cooked through.
  • Flip the pancakes carefully. Pancakes are delicate and can easily break if you're not careful.
  • Serve the pancakes immediately with your favorite toppings.

Conclusion:

Cottage cheese pancakes are a delicious and easy-to-make breakfast option. They're perfect for a lazy weekend morning or a quick weekday breakfast. With just a few simple ingredients, you can make a batch of cottage cheese pancakes that the whole family will love. So next time you're looking for a new breakfast recipe, give cottage cheese pancakes a try.
