Cottage Cheese, Chicken & Tomato Salad image

This is a very refreshing salad - you can vary the ingredients depending on what you have in the fridge. Use leftover chicken or some canned chicken. I like a bit of low fat Sundried Tomato Oregano dressing on it but use the dressing of your choice. Garlic croutons are nice too! This is one serving - repaeat for as many as you wish

Tips:

  • Choose the right tomatoes: Use ripe, in-season tomatoes for the best flavor. Look for tomatoes that are firm and have a deep red color.
  • Use fresh herbs: Fresh herbs like basil, oregano, and thyme add a lot of flavor to this salad. If you don't have fresh herbs on hand, you can use dried herbs, but be sure to use less since they are more concentrated.
  • Don't overmix the salad: Gently toss the salad ingredients together just until they are combined. Overmixing will make the salad watery.
  • Serve the salad immediately: This salad is best served fresh. If you need to make it ahead of time, you can refrigerate it for up to 2 hours. However, the tomatoes will start to lose their flavor and texture the longer the salad sits.

Conclusion:

Cottage cheese tomato salad is a refreshing and flavorful salad that is perfect for a summer meal. It is easy to make and can be tailored to your own taste preferences. Whether you like your salad simple or loaded with toppings, this salad is sure to please everyone at your table.
