1 (3 pound) cottage ham
4 russet potatoes, peeled and halved lengthwise
3 (14.5 ounce) cans cut green beans, drained
1 white onion, sliced thickly
water to cover

Steps:

  • Put ham into a Dutch oven. Arrange potato halves, green beans, and onion slices around the ham. Pour enough water into the pot to cover the vegetables completely.
  • Place a cover on the pot and bring the water to a boil, reduce heat to medium-low, and simmer mixture until potatoes are completely soft, about 55 minutes.
  • Remove ham to a cutting board to slice to desired thickness; serve with vegetables.

Not normally a white-bread lover, but reminds me of my childhood to make this ham into the best leftover sandwich ever. White bread, cottage ham, and Miracle Whip. Like it best with the ham warmed up. Don't salt until you taste it. The ham is salty. Might be good served with a horseradish sauce on the side or a grainy mustard. Unsure of yield.

3 lbs cottage ham
1 medium onion, quartered
5 carrots, peeled, cut bite-size
5 potatoes, peeled, quartered
1 head cabbage, cut large wedges
pepper

Steps:

  • Place the Cottage Ham in a large pot. Cover with cold water and cook at medium heat for 30 minutes. Add the onion, carrots, potatoes, cabbage and pepper. Cover with more water if necessary. Cook until the vegetables are fork-tender. You could drain off the first water that the ham is cooked in if it's too greasy. Add new water if you like.
  • Serve in a bowl with buttered bread along side.

I have made cottage rolls often but couldnt find a recipe here on Zaar so I thought I would post my old standby. It is like a corned beef flavour wise but it is a ham made from pork shoulder. It is much cheaper than pork roast, ham or corned beef usually.

1 (3 lb) cottage ham (Cottage Roll)
1 medium onion, chopped
5 carrots, peeled and sliced in 2 inch lengths
5 medium potatoes, peeled and cut in quarters
2 cups largely chopped cabbage (optional)

Steps:

  • Place cottage roll in roasting pan or crockpot.
  • Surround it with potatoes, carrots, onion and cabbage if you like.
  • You can add as many as will fit or what you need for supper or use any size cottage roll that will fit.
  • Sprinkle with pepper and cover roast 3/4 with water.
  • cover and Bake at 300 degrees for 3 hours or in crockpot on high 6 hours or low 8-10 hours.
  • Cottage roll should fall apart like a pot roast.
  • Serve with mustard (dijon is my favorite).
  • The leftover stock can be spiced up as a gravy or makes a great bean or pea soup base.

2 lb cottage ham (cottage butt)
3 can(s) green beans (not french style)
1/2-1 yellow onion, medium
salt and pepper

Steps:

  • 1. Drain green beans and place in bottom of crockpot. Chop onion in big chunks and spread out over green beans. My family doesn't eat the onion so I make them big enough to take out at the end. Salt and pepper.
  • 2. Place the ham on the green beans and onions. Add enough water to have about an inch of it in the bottom. I add a half of a cup to my 4qt oval crockpot.
  • 3. Cook on high for 4 hours. Good served with potatoes and corn bread. Enjoy!!

1 1/2 c all purpose flour
3 tsp baking powder
1/4 tsp salt
3/4 c daisy brand cottage cheese
2 eggs, lightly beaten
1/3 c vegetable oil
1/4 c milk
1/2 c ham, finely chopped
1/2 c cheddar cheese, shredded
1/4 or 1/8 c green onions, sliced

Steps:

  • 1. Mix the flour, baking powder and salt in large bowl and set aside. Mix the cottage cheese, eggs, oil and milk in another large bowl.
  • 2. Fold the ham, Cheddar cheese and green onions into the cottage cheese mixture. Stir the wet mixture into the dry ingredients until moistened.
  • 3. Spray 12 nonstick muffin cups very well with nonstick spray. Fill each muffin cup 2/3 full with batter. Bake in a preheated 375F oven 20 to 25 minutes or until the muffins are golden brown on top and toothpick inserted in center comes out clean.
  • 4. Serve up with breakfast or eat as a meal by itself.

I grew up on the East coast and have fond memories of my Grandmother making the most delicious Cottage Ham and Cabbage. Cottage hams are virtually unheard of anymore, especially west of the Mississippi. After moving west, I searched high and low for a butcher that would sell me a Cottage Ham to no avail. Finally met someone that made them and he even told me how. This is unlike what most people think of when thinking of a ham. This ham ends being boiled with cabbage, onion, carrots and potatoes. It has a unique consistency. It sort of falls apart when cooked. Makes great sandwiches the following day. This is the technique for first making the Cottage Ham itself. Wish I could buy them still. Believe company in Chicago called Rose Packing handles different grades of them. Some have a lot of filler - yuck. If you live where Rose supplies Cottage Hams, get a good one. Makes my mouth water just thinking about them. Zaar won't allow the second ingredient to be properly listed. It's called Sweeter 'n Sweet. I did buy the Sweeter 'n Sweet at a local butcher. It's a sugary product used to make the brine.

3 3/4 lbs seasoning
5 gallons water

Steps:

  • Choose a very lean pork butt and trim all remaining fat. Remove the bone and tie in a net.
  • Mix Sweeter 'n Sweet 3/4 lb to 1 gallon water. Make up 5 gallons. With a needle, inject this mixture into the pork until it is doubled in size. Soak in remaining cure for 5 days. Be sure it is weighted down if it floats.
  • Smoke at 135 degrees for 1 hour, then increase temperature to 180-185 degrees for 3-4 hours or until internal temperature of ham reaches 145 degrees.
