1-1/3 cups milk
1/2 cup grated Parmesan cheese
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
1 can (6 ounces) crabmeat, drained, flaked and cartilage removed
1/2 cup dry bread crumbs

Steps:

  • In a large saucepan, melt 2 tablespoons butter. Stir in flour until smooth; gradually add the milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat; add the cheese and stir until smooth. Add the spinach and crab., Transfer to a greased shallow 1-qt. baking dish. Melt the remaining butter; toss with bread crumbs. 4 medium-size portabella mushrooms
1 (4 to 6-ounce) can crab meat, picked over and drained
3 ounces grated mozzarella cheese
1 tablespoon olive oil
1/4 onion, chopped
1 clove garlic, chopped (1 teaspoon)
1/4 cup white wine (optional)
1 cup half-and-half
6 ounces spinach, rinsed and chopped
3 tablespoons grated Parmesan cheese
1/4 cup breadcrumbs
Salt and freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • Remove the stems from the portobello mushrooms and chop the stems. Set the whole mushroom caps aside.
  • In a medium heated frying pan add olive oil, onion, garlic, and mushroom stems. Saute until soft, about 3 minutes. Deglaze pan with white wine.
  • Pour in half-and-half and mix well. Add chopped spinach and cook until soft, about 5 minutes. Shake in grated Parmesan and breadcrumbs. Sauce will thicken when heated through, another few minutes. Remove from heat.
  • On a baking sheet, or large pan with a grate, arrange mushrooms, cavity-side up. Spoon in enough spinach mixture to fill the portobello mushroom cap. Stack on a couple spoonfuls of crab. Top with mozzarella cheese. Bake for 25 to 30 minutes, checking occasionally to make sure the cheese doesn't burn. Remove mushrooms from the oven and serve warm.

2 dozen oysters
1 cup/250ml 35-percent cream
1 teaspoon/5ml Dijon mustard
1 cup/250ml grated Parmigiano-Reggiano
4 cups fresh spinach (1 liter), stemmed
1 cup/250ml breadcrumbs

Steps:

  • Shuck the oysters, reserving the liquid. Place the oysters and liquid in a saucepan. Reserve the deeper half of each oyster shell. Cook the oysters over medium heat for about 30 seconds, just to give them some firmness. With a slotted spoon, remove the oysters to a bowl and set aside. Add the cream to the oyster liquid in the pan and cook for 10 minutes to reduce. Add the mustard and half the cheese. Set aside.
  • In another saucepan over low heat, cook the spinach with 1 tablespoon (15 ml) water until wilted. Strain the excess spinach water into the cream mixture and set the spinach aside. Mix the remaining 1/2 cup cheese and the breadcrumbs in a bowl and season with salt and pepper.
  • Heat the broiler. Arrange the oyster half-shells in a casserole dish filled with seaweed or large rock salt. Place each oyster in a shell and add a bit of the cream mixture and some spinach. Top with the breadcrumb mixture. Broil until the cheese melts and the tops are lightly browned, about 1 minute.

2 (10-ounce) packages chopped frozen leaf spinach, thawed
1 (10-ounce) can condensed cream of mushroom soup
1/2 cup cream or milk
1 1/2 cups sharp cheddar cheese, grated
4 tablespoons butter
2 to 3 slices fresh French bread, broken into small pieces
coarsely ground black pepper

Steps:

  • Squeeze as much water as possible out of the chopped spinach and place in a 12-inch Dutch oven. Thin the soup in a bowl with the milk, fold in the grated cheese, and set aside. In a smaller DO or skillet melt the butter over low heat and add the broken bread broken. Fry for a couple of minutes until the bread bits have soaked up all the butter. 2 lbs frozen spinach (chopped)
12 ounces bacon, smoked, finely diced
1 cup white onion, finely diced
2 ounces butter
salt, to taste
black pepper, to taste
1/2 teaspoon dried chipotle powder
1 pint oyster, shucked in their liquid
1 ounce anisette
1/2 cup heavy whipping cream
8 ounces cream cheese
1/2 cup parmesan cheese, grated

Steps:

  • Drain all of the liquid from the spinach.
  • Over medium flame, slowly brown bacon to render all of the fat, keeping fat in pan.
  • Add the onions, butter, salt and pepper, and chipotle powder. Saute slowly until onions are lightly caramelized.
  • Add oysters with juice and simmer until juice is fully reduced. Stir often to break oysters into small pieces.
  • Add spinach and stir for about 1 minute to fully incorporate the seasoning.
