3 ½ cups all-purpose flour
1 teaspoon salt
1 cup water
1 (.25 ounce) package active dry yeast
1 pinch white sugar
¼ cup flour for dusting
2 cups pizza sauce
20 slices fresh mozzarella cheese
20 leaves fresh basil
olive oil
sea salt to taste

Steps:

  • Stir flour and 1 teaspoon salt in a bowl. Set aside.
  • Mix water, yeast, and sugar in a large bowl. Let stand until yeast begins to form a creamy foam, about 5 minutes.
  • Stir half the flour mixture into yeast mixture until no dry spots remain. Stir in remaining flour, 1/2 cup at a time, mixing well after each addition. When dough pulls together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes.

Top with 1/2 cup of tomato sauce and spread to cover within an inch of the edge of the dough. Arrange 5 slices of mozzarella cheese on top of the tomato sauce, then place 5 basil leaves on top. Drizzle pizza with 1 tablespoon olive oil and sprinkle with sea salt to taste. Repeat for 3 remaining dough balls.
  • Slide each pizza onto the pizza stone in the preheated oven. Bake until cheese is bubbly and the underside of the crust is golden brown, 5 to 7 minutes.

1 package Refrigerated Pizza Dough
3 Tbsp. Extra Virgin Olive Oil
1 Tbsp. Garlic, minced
1 Tbsp. Parsley, minced
1 Tbsp. Oregano
Sea Salt & Pepper
8 Roma Tomatoes, sliced (divided - save 10 slices for the top)
1/2 Medium Red Onion, minced
2 cups Sargento® Classic Shredded Mozzarella Cheese
1 cup Fontina Cheese, shredded
10 Fresh Basil Leaves (divided)
1/2 cup Sargento® Artisan Blends Shredded Parmesan Cheese

Steps:

  • Preparation Instructions:
  • Position oven rack on lowest shelf and preheat to 425 degrees F. Lightly oil a pizza
  • pan. Roll out dough as thin as possible. Let rest 10 minutes.
  • In a small skillet, heat 1 tablespoon oil and saute sausage until browned. Remove from pan and coin slice. In the same pan, saute onion and parsley to golden, then stir in garlic and oregano for a few seconds. Add tomatoes to pan, crushing them as they are mixed (do not substitute crushed tomatoes). Boil, stirring 5 minutes or until thick.
  • Spread sauce over crust, sprinkle with half the basil, Mozzarella, Fontina, sausage, the remaining slices of tomatoes and finally the olive oil. Finish with generous pepper and a little sea salt. Bake for 10 minutes.
  • Using a spatula and an oven mitt, slip the pizza off the pan directly onto the oven rack, bake for two minutes. Slip pizza back onto pan, remove from oven. Sprinkle with the remaining fresh basil and parmesan cheese, cut and enjoy!

1 burrito-size flour tortilla
1/2 tomatoes, thinly sliced (remove seeds and most of the liquid to help insure a crispy crust)
1/2 teaspoon garlic, minced (jarred is fine)
4 -10 basil leaves
2 ounces fresh mozzarella cheese, sliced
1 dash olive oil (can also use peppered flavored oil)

Steps:

  • Preheat oven to 425 degrees.
  • Place cast iron skillet, that has been slightly brushed with olive oil, (or other heavy metaled oven proof pan) in oven for a few minutes to heat.
  • Meanwhile, assemble pizza using tortilla as the base, top with tomatoes, garlic, cheese, basil leaves (can leave leaves whole, or julienne). I top with basil last because I love crispy basil. If you don't like basil this way, put under the cheese.
  • Place tortilla in hot skillet. It should sizzle. Cook until done (mine takes about 8-10 minutes).
