2 lemons, quartered
2 bay leaves
3 tablespoons kosher salt
2 tablespoons whole black peppercorns
1/2-3/4 cup crab and shrimp boil seasoning, such as Old Bay, plus more, or 4 (3-ounce) bags Zatarain's Crawfish, Shrimp, and Crab Boil (See Cooks' Note)
4 pounds small new potatoes (about 1 1/2" in diameter)
2 pounds smoked pork sausage (about 4 links), such as kielbasa, cut into 2" pieces
2 sweet or yellow onions, peeled, quartered
8 ears of corn, shucked, cut in half
4 pounds fresh large shrimp (31-35 count; preferably wild-caught), unpeeled
For the cocktail sauce (optional):
1 cup ketchup
2 tablespoons plus 2 teaspoons prepared horseradish
2 tablespoons plus 2 teaspoons Worcestershire sauce
1 tablespoon fresh lemon juice
Louisiana-style hot sauce, such as Crystal (to taste; optional)
For the lemon butter sauce (optional):
1/4 cup (1/2 stick) unsalted butter, melted
2 tablespoons (or more) fresh lemon juice

Special Equipment
A large (at least 12-quart) stockpot, preferably with a perforated insert, or 2 large (at least 6-quart) pots

Steps:

  • Cook the shrimp boil:
  • Fill stockpot with 6 qt. water (if using 2 pots, divide ingredients and water between them). Add lemons, bay leaves, salt, peppercorns, and 1/2 cup seasoning, cover, and bring to a rolling boil. Add potatoes, return to a boil, and cook 7 minutes. Add sausage and onions, return to a boil, and cook 5 minutes. Add corn, return to a boil, and cook until corn is cooked and potatoes are tender when pierced with a knife, about 5 minutes more.
  • Add shrimp and cook (no need to return to a boil), stirring gently, until shrimp turn pink, about 3 minutes. Remove insert or drain through a very large colander.
  • Make the cocktail sauce:
  • Stir ketchup, horseradish, Worcestershire, lemon juice, and hot sauce, if using, in a medium bowl.
  • Make the lemon-butter sauce:
  • Melt butter in a small saucepan over medium-high heat. Transfer to a medium bowl and stir in lemon juice and hot sauce, if using. Taste and add more lemon juice, if needed. Cover and let sit in a warm place.
  • Serve the shrimp boil:
  • Serve shrimp boil on a newspaper-lined table or large platters. Dust with additional Old Bay, if using. Serve with sauces alongside, if desired.

FRIED CORN (COUNTRY STYLE CREAMED CORN)

My family called this recipe fried corn, but it's really sort of a cross between creamed corn and fried, but to clear, it's not soupy creamy like canned creamed corn and has tons more flavor. It used to be hard to find truly sweet corn, but with all the hybrids out there these days it's fairly easy. I personally try to use "brentwood" sweet corn, and preferably white. But any sweet corn will work fine. My Granny taught me this recipe, she was one of those fabulous cooks, who never measure anything. If you need a larger quantity than what I've provided for in the recipe, no problem. Just add more corn. And adjust the seasons and fats accordingly. This is an easy recipe, even for novice cooks. If you have questions I didn't cover in the directions, please email me, I'll try to respond in a timely fashion. Now it's prime corn time at most farmers market, so get out there and get some corn!! Oh, btw, I make this for bbq's (at my daughter in laws request, she actually pouts if I don't make this), but I love it with simple family meals, especially meatloaf.

6 ears sweet corn
1 tablespoon butter
2 tablespoons bacon drippings
1/4 teaspoon salt
1/4 teaspoon ground pepper
1 cup water

Steps:

  • Husk corn, making sure to remove all silks. Do not cut off the stem end of the ear.
  • Holding the stem of the corn, using a sharp straight blade type knife - you don't need a huge knife, just something sharp. From experience I can tell you that a small paring knife won't work. Something about the length of a boning knife is best. Hold corn over a large skillet (best to prop the ear of corn against the bottom of the pan, and begin cutting the kernels, so that they fall into the pan. Once all kernels are removed, take the back of a butter knife, and scrape it against all sides of the corn, you'll notice pulp and a milky liquid, keep scraping until nothing is coming out, then turn the corn so you are holding the tip, with the stem end in the pan, and repeat this process. Don't worry it's impossible to scrap the ear too much. Repeat with the remaining corn.
  • Add the butter and bacon drippings to the pan, and add the cup of water. If one cup doesn't cover the corn, just add a little more, til the corn is just barely cover with water. Add a few dashes of salt and a dash of pepper.
  • Turn heat to medium low, cover the pan, and cook until it comes to a boil (if you want to rush this process, just turn the heat up a little. But keep and eye on it, you don't want it to boil dry at this point.
  • Let it boil about 10 to 15 minutes, then reduce heat to the lowest setting your stove has. Remove the lid and continue to cook, until all water is absorbed and/or evaporated. I recommend tasting the corn, just before you start to cook down the water, and decide if it needs more butter or salt, and if necessary add a bit more to taste. Personally I've never measured the amount. My granny taught me this recipe and she never measured anything. This final cooking stage is very important, you want to cook it slow, to help the natural sugar in the corn start to caramelize a bit. Once the water gets pretty low, you want to keep a close eye on it, and stir often. You'll notice when it's close to done, you'll be scraping sort of a thick juice from the bottom of the pan. (my best quess is this is the caramelized fluid, but also the stuff that you scraped from the ears).

  • For the sauce: Place the ketchup, brown sugar, syrup, vinegar, Worcestershire, pepper and garlic in a small pot. Bring to a low boil, reduce the heat to low and thicken 15 minutes. (This sauce stores well for weeks and makes a tasty sloppy Joe, burger baster and pork chop topper if you want to double the recipe. If using for a more all-purpose BBQ sauce, add 1/2 cup chicken stock and simmer for 20 minutes.) For the chowder: Heat the EVOO in a soup pot over medium-high heat and add the bacon, if using. Cook until crisp 2 to 3 minutes. Add the potatoes, corn, celery, onions, bell pepper, chile, garlic, thyme, seafood seasoning and bay leaf, and stir. Cook to soften, 8 to 10 minutes. Add the beer and cook the beer down by half, 1 to 2 minutes. Add the beans, tomatoes, shredded chicken, BBQ Sauce, stock and 2 cups of water. Simmer a few minutes to combine the flavors, cool and store for a make-ahead meal. Reheat over medium heat. When ready to serve, peel, pit and dice the avocado and dress it in the lime juice. Place diced avocado and some broken tortilla chips in each soup bowl, top with the hot chowder and serve.

2 large russet potatoes

  • Peel and dice potatoes. Bring a pot of water to boil. Parboil potatoes by placing in boiling water for 5 minutes. Pour off water and set potatoes aside.
  • In a large pot, saute bacon until well done. Add onion, celery, carrot, peppers, and corn to bacon and bacon fat. Saute until tender.
  • Add flour to bacon and vegetables to make a roux. Stir until smooth and thickening. Add potatoes. Gradually add chicken broth and stir until smooth. Bring to a boil. Steps:

6 green onions, chopped
3 tablespoons butter
1 (16 ounce) package frozen corn, thawed
2 teaspoons cornstarch
1/2 cup half-and-half cream
1/4 cup water
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup grape tomatoes, halved

Steps:

  • In a large skillet, saute the onions in butter for 2-3 minutes or until tender.
  • Stir in the corn; cover and cook for 4-5 minutes or until heated through.
  • Meanwhile, in a small bowl, combine the cornstarch, cream, water, salt and pepper until smooth.
  • Stir into corn mixture.
  • Bring to a boil; Cook uncovered for 2 minutes or until thickened.
  • Stir in tomatoes and serve!

1/2 cup butter
2 medium onions, peeled and diced
4 stalks celery, diced
6 medium potatoes, peeled and diced
1/2 cup flour
1 1/2 quarts chicken broth (low sodium preferred) or 1 1/2 quarts vegetable broth (low sodium preferred)
2 (15 ounce) cans creamed corn
3 cups corn (either fresh or frozen)
1/4 cup fresh parsley, chopped
1/4 cup fresh chives, chopped
2 cups heavy cream or 2 cups whipping cream
1 lb lump crabmeat or 3 (6 ounce) cans crabmeat, drained

Steps:

  • Cook bacon on a large skillet until soft but not crisp.
  • Add butter, melt.
  • Add onions and celery; cook until partially cooked.
  • Add potatoes; cook, stirring frequently until vegetables are tender.
  • Stir in flour; cook, stirring constantly for five minutes.
  • Stir in broth until smooth.
  • Reduce heat and simmer for approximately 20 minutes, stirring occasionally to prevent sticking.
  • Stir in creamed corn and corn, parsley, chives, salt and pepper.

We love this because it uses canned corn and makes it taste much better. It's so easy and quick to put together. The original recipe uses cream-style corn, but I have only used whole kernel corn. Recipe is from "Favorite Recipes From Southern Kitchens---Vegetables" which apparently was published in 1968 by The Progressive Farmer Magazine and is credited to Charlotte McCracken of Sentinel, Oklahoma.

1 (14 1/2-16 ounce) can whole kernel corn, drained
black pepper
1/4-1/2 cup butter or 1/4-1/2 cup margarine

Steps:

  • Preheat oven to 350 degrees.
  • Grease or butter a small, shallow casserole dish. ( Mine is approximately 6 1/2 inches square and 2 inches deep.).
  • In the prepared dish, combine the cream, corn, and pepper.
  • Cut butter in small pieces and put on top of corn.
  • Put the broken saltine pieces on top of casserole.
  • Bake until slightly brown on top (approx. 20 minutes).

1 cup grits (any kind you like, but not "instant". I used quick-cooking white, but stone-ground or yellow would be great)
1 teaspoon salt
3/4 cup leftover country ham, cut into small pieces
1/3 cup milk
2/3 cup yellow kernel corn (I used canned Niblets (drained) but you can use frozen if desired)
3 tablespoons butter, cut into pats (I used salted)
1/2 teaspoon freshly cracked black pepper
1 cup shredded cheddar cheese (I used mild)
Salt to taste, optional

Steps:

  • Cook desired amount of grits in salted water as directed on package. (I used 1 c. quick-cooking white grits and 1 tsp salt in 3 1/2 cups boiling water) Heat 1 teaspoon olive oil in a small skillet; add ham pieces and saute until browned. Set aside. When grits are done, whisk in the milk and corn, cover and cook for another minute or two. Remove from heat and stir in the butter, black pepper, and cheese until melted. Taste and adjust seasonings to taste. Fold in ham pieces. Serve immediately with hot biscuits, scrambled eggs (or however you like them), and hot coffee. Keep grits covered to stay warm. (Stir in a little water to thin for desired creaminess). Thin any leftovers with a little water and store in an airtight container in the refrigerator. Reheat in the microwave.

1 lb country style sausage, browned and crumbled (i use bob evans in a "tube")
1 small onion, chopped
2 pkg (2.75 ounces each) country sausage gravy mix (i use pioneer brand, but any sausage gravy mix will work)
4 c half and half
3 1/2 - 4 c whole milk
1 pkg (12 ounces) frozen corn, thawed (or 3 ears fresh corn, cooked and cut off the cob)
1 pkg (4.2 ounces) dehydrated shredded potatoes (rehydrated) (i use hungry jack in a small "milk carton" found in the instant mashed potato section of your grocery store)
1/4 c diced roasted red peppers
1 tsp dried parsley flakes

Steps:

  • 1. Place a 4-5 quart Dutch oven over medium high heat. Crumble the sausage into the Dutch oven and cook for 10-12 minutes, breaking meat up with a spoon as you go, until browned.
  • 2. Add the onion, mix well and cook another 3-4 minutes.
  • 3. Meanwhile, in a large bowl, combine the gravy mix and the half and half. Mix well with a wire whisk. Add to the meat mixture and mix well. Stir often until thickened and add 2 cups of the whole milk. Cook until heated thru.
  • 4. Add the corn, potatoes, roasted red pepper and dried parsley flakes. Mix well. Cook until thickened and add the remaining 1 1/2 to 2 cups of whole milk. Mix well.
  • 5. Bring to a simmer, stirring constantly to prevent sticking.
  • 6. Serve with a dollop of sour cream and some chowder crackers on the side.
  • 7. PLEASE NOTE: you may have to adjust amounts of shredded potatoes and liquid to make this chowder to your desired consistency ..... I, personally, love really thick chowders ....... but, adjustments can easily be made. Either way ..... it's delicious and satisfying.
