1 package (16 ounces) frozen corn, broccoli and red pepper
1/4 cup water
1/2 cup chopped onion
2 tablespoons butter, divided
1 can (10-3/4 ounces) condensed cheddar cheese soup, undiluted
1/4 cup milk
1-1/3 cups crushed saltines

Steps:

  • In a large saucepan over medium heat, bring vegetables and water to a boil. Reduce heat; cover and simmer for 5-6 minutes or until tender; drain. In another large saucepan over medium heat, saute the onion in 1 tablespoon butter until tender. Add soup and milk; stir until smooth. Add cracker crumbs and cooked vegetables. , Spoon into a greased 8-in. square baking dish. Dot with remaining butter. Bake, uncovered, at 350° for 25-30 minutes or until golden.

2 teaspoons cornstarch
1/2 cup half-and-half cream

1-1/2 cups yellow cornmeal
1/4 cup all-purpose flour
1 tablespoon sugar
1 teaspoon baking soda

1-1/2 cups buttermilk
2 tablespoons butter, melted
1-1/2 cups fresh or frozen corn
Optional: sour cream, 6 bacon strips cooked and crumbed and 2 Tbsp minced chives

  • In a bowl, combine the first 5 ingredients; make a well in the center. In another bowl, beat the egg, buttermilk and butter; pour into well and stir just until blended. Though it is nowhere near what he made. It is a tweaking of several recipes and of what I remember, and do not add sugar!! I will cry if anyone does!!

3 tablespoons shortening (I use crisco butter flavor, or bacon drippings are awesome, too!)
1 cup cornmeal
1/2 cup flour
1 tablespoon baking powder
1 teaspoon baking soda

2 eggs
1 1/2 cups buttermilk

  • Preheat the oven to 425°.
  • Put the shortening in a cast-iron skillet and place in the oven till melted.
  • Combine the cornmeal and flour. In seperate bowl whisk eggs until foamy then whisk in buttermilk. Add the rest of the dry ingredients to the cornmeal mixture.
  • Combine wet and dry ingredients. Mix should be pourable. Take the hot skillet from the oven, pour the batter into the hot pan directly onto the melted hot shortening, this is what makes it sooo yummy!.
