This meatloaf recipe has been in my 3-ring binder of recipes clipped and pasted from magazines for a long time. I think it may originally have been from Good Housekeeping magazine. Anyway, it's one of the best meatloafs I've ever had and I'm posting it on Zaar for safekeeping!Leftovers make GREAT meatloaf sandwiches!

Steps:
- Lightly steam onions, celery, and bell peppers and let cool. Place the cooled vegetables into a mixing bowl and add the pork, sirloin, ketchup, eggs, half and half and mix well. Mix in the oatmeal and spice mix. Place the meat into a loaf pan lined with bacon strips. Place in refrigerator overnight so that the meat loaf firms up. When ready for use, remove from the refrigerator; cover the top of the loaf pan with aluminum foil; place in a pre-heated 350 degree oven on top of a roasting pan. Do this to prevent the overspill from making a mess out of your oven and cook until the inside temperature (with a thermometer) reaches 165 degrees (about 1 1/2 hours). 15 minutes before it is done, remove the foil - this will allow the top to brown. Remove from the oven and pour out excess oil and let it sit for 20 minutes. Turn the loaf pan upside down to remove the meatloaf. Slice with a sharp knife.

SAVORY HERB MEATLOAF
This is by far my favorite meatloaf recipe. It is moist and savory, and has always been a big hit anytime I've made it. If you want to lighten it up, you can substitute ground turkey, and it still turns out great!

Tips:
- Choose the Right Meat: For a flavorful meatloaf, use a combination of ground beef and ground pork. The pork adds extra moisture and richness to the loaf.
- Season Generously: Don't be shy with the seasonings! A good meatloaf should be packed with flavor. Use a variety of herbs and spices, such as garlic, onion, thyme, rosemary, and oregano.
- Add Some Veggies: Vegetables add moisture and nutrition to meatloaf. Try adding finely chopped carrots, celery, or onions to the mixture.
- Use Quality Breadcrumbs: Fresh breadcrumbs help to bind the meatloaf together and give it a light and fluffy texture. Avoid using store-bought breadcrumbs that contain preservatives.
- Don't Overmix: Overmixing the meatloaf mixture can make it tough. Mix just until the ingredients are combined.
- Cook at a Low Temperature: Meatloaf should be cooked at a low temperature (350°F) for a long time (1 hour per pound). This helps to prevent the loaf from drying out.
- Let it Rest: Before slicing and serving, let the meatloaf rest for 10-15 minutes. This allows the juices to redistribute throughout the loaf, making it more moist and flavorful.
Conclusion:
Country-herbed meatloaf is a classic comfort food that is easy to make and always a crowd-pleaser. With its moist, flavorful interior and crispy, herbed crust, this meatloaf is sure to be a hit at your next dinner party or family gathering.
