Time 1h40m

Yield 6 to 8 servings

Number Of Ingredients 13

Cooking spray
3 tablespoons unsalted butter
1 medium onion, diced
3 tablespoons all-purpose flour
2 cloves garlic, minced
Kosher salt and coarsely ground black pepper
1/2 to 1 teaspoon cayenne pepper
1 teaspoon mustard powder
2 cups goat's milk or regular milk

Sliced green onions, for garnish

Steps:

  • Preheat the oven to 350 degrees F. Spray an 8-by-8-inch flameproof baking dish with cooking spray.
  • In a skillet over medium heat, melt the butter. Add the onions and saute until translucent, 3 to 4 minutes. Add the flour and stir until combined. Allow to cook and thicken slightly, about 3 minutes. Remove from the heat.

GARLIC MASHED POTATOES (COOK'S COUNTRY METHOD)

Garlic Mashed Potatoes (Cook's Country Method) image

From Cook's Country TV. Some notes: 1) This method is to avoid the washed-away flavor of boiled potatoes. 2. The purpose of the sugar is to mimic that sweet flavor without oven roasting. 3) Cut the potatoes into small pieces to allow more surface area to soak up garlic flavor and to promote even cooking. 4) ...and most importantly, to eliminate excess starch, which produces gluey mashed potatoes, give the raw, cut russets a good rinse under running water before adding them to the pot to simmer.

Provided by gailanng

Categories     Mashed Potatoes

Time 45m

Yield 6-8 serving(s)

Number Of Ingredients 8

4 lbs russet potatoes, peeled, quartered, and cut into 1/2-inch pieces
12 tablespoons unsalted butter, cut into pieces
12 garlic cloves, minced
1 teaspoon sugar
1 1/2 cups half-and-half
1/2 cup water
salt and pepper
parsley, cheddar cheese or scallion, optional garnish

Steps:

  • Place cut potatoes in colander. Rinse under cold running water until water runs clear. Drain thoroughly. This is a very important step to eliminate excess starch, which produces gluey mashed potatoes.
  • Melt 4 tablespoons butter in Dutch oven over medium heat. Cook garlic and sugar, stirring often, until sticky and straw colored, 3 to 4 minutes. Add rinsed potatoes, 1 1/4 cups half-and-half, water and 1 teaspoon salt to pot and stir to combine. Bring to boil, then reduce heat to low and simmer, covered and stirring occasionally, until potatoes are tender and most of the liquid is absorbed, 25 to 30 minutes.
  • Remove from heat, add remaining butter to pot and mash with potato masher until smooth. Using rubber spatula, fold in remaining half-and-half until liquid is absorbed and potatoes are creamy. Season with salt and pepper.
  • Top with garnish.

COUNTRY GLAZED SWEET POTATOES

COUNTRY GLAZED SWEET POTATOES image

I created this recipe so I could use some of the VIETNAMESE CINNAMON I had ordered, to go with my Smothered Cabbage with Carrots & Onion Dinner. In my opinion there is a WORLD of difference in the aroma & flavor of this cinnamon when compared to regular. The Vanilla Bean Paste also blends well with the light corn syrup used in...

Provided by Rose Mary Mogan

Categories     Potatoes

Time 1h20m

Number Of Ingredients 7

2 1/2-3 lb sweet potatoes, peeled & cut into large chunks
6 Tbsp butter,softened
1/2 c light brown sugar, or white sugar
2/3 c light corn syrup
1 Tbsp vanilla bean paste or vanilla extract
1/3 c orange juice, apple juice or water
2 tsp vietnamese cinnamon, or regular cinnamon

Steps:

  • 1. Peel and chunk potatoes into large chunk pieces. Place them in a large pot, cover with water and cook for 10 minutes only. Potatoes should be still firm to touch and not completely cooked through.
  • 2. I used my electric skillet for the recipe this time, but I also love using a cast Iron skillet for it's even temperature cooking. Add in the corn syrup, vanilla Bean Paste, Brown Sugar, VIETNAMESE CINNAMON & soften butter, heat just until butter melts, then stir to blend mixture together.
  • 3. Once butter is melted and mixture begins to slowly simmer, add in the orange juice, apple juice or water, and stir.
  • 4. Now add in the partially cooked potatoes, lower the heat setting to low, and continue to cook slowly.
  • 5. Continue cooking and stir to prevent potatoes from sticking to bottom of skillet, REMEMBER YOU MUST COOK SLOWLY, SO BE PATIENT. Glaze will gradually begin to caramelize and thicken, continue glazing and coating the potatoes, moving in skillet to prevent sticking to the bottom. Should take between 45 minutes to an hour, to peak at the optimum point.
  • 6. Serve while still hot. You will not believe how much flavor these potatoes have.
  • 7. NOTE: Vietnamese Cinnamon is also called Saigon Cinnamon, it has a higher oil content , is sweeter, and much more aromatic, & has a stronger flavor, you will notice the difference in how aromatic it is right away. My next project is Cinnamon Rolls.

COUNTRY STYLE GREEN BEANS, HAM & NEW POTATOES

Country Style Green Beans, Ham & New Potatoes image

Everyone has their own recipe for cooking fresh green beans and this is mine. It's a little kicked up and a lot delicious. I know you'll love it.

Provided by Donna Graffagnino

Categories     Vegetables

Time 3h15m

Number Of Ingredients 13

1 large bunch of fresh green beans, cleaned and snapped
1 large onion, halved and sliced thin
1 bunch green onions, sliced thin
1 medium green bell pepper, chopped
1 Tbsp bacon grease
3-4 c chicken stock
1/4 c beer (or more to taste)
1/2 lb ham seasoning
1 Tbsp dried parsley
1-2 tsp creole seasoning
1 Tbsp fresh ground black pepper
1 tsp salt
8-10 small new potatoes, washed

Steps:

  • 1. In a large soup pot add all ingredients except potatoes - heat over medium heat until it comes to a boil. You want to have enough liquid to just barely cover the beans. Reduce heat and simmer another 2 - 3 hours.
  • 2. Check for seasoning and adjust as needed. If it tastes a little salty it's OK, the potatoes will soak some of that up. The beans should be very tender and beginning to fall apart.
  • 3. Add the new potatoes and push them down into the beans so that they're covered with liquid. If more liquid is needed add more chicken stock or water.
  • 4. Raise heat to medium and bring liquid to a boil - cover and boil for 20 minutes or until potatoes are done. Taste again and adjust seasoning as needed. Enjoy!
  • 5. NOTES: The beer and the bacon grease make all the difference in the taste so don't leave that out.

~ GRAMS COUNTRY STYLE POTATOES & GREEN BEANS ~

~ Grams Country Style Potatoes & Green Beans ~ image

These green beans bring back many great memories of my Gram. I always admired what she was able to do with so little ingredients. This was one of my favorite meals she would make with the abundance of fresh green beans and new potatoes from her garden. She sure could cook and fresh veggies always made such a difference. Here's to...

Provided by Cassie *

Categories     Other Side Dishes

Time 30m

Number Of Ingredients 8

3/4 lb fresh green beans - ends snapped - cut into or into 3rds depending how big they are. steam or boil in salted water until crisp tender
8 slice bacon, chopped
2 medium new red potatoes - cubed ( i don't peel )
1 medium onion, cut in half and sliced
1/3 c water or more as needed ( i sometimes use chicken broth )
3/4 tsp salt
1 clove garlic, minced
fresh cracked black pepper

Steps:

  • 1. Steam or boil green beans until almost tender. They will cook longer in the skillet, so you don't want them mushy.
  • 2. In my cast iron skillet, I add the bacon and cook until not quite crisp.
  • 3. Add the onion, potatoes, garlic, salt, pepper and water. Place a lid over the skillet and cook on med for 10 - 12 minutes. Stirring occasionally. Remove lid and add the beans and more water if going dry. Remain cooking until potatoes are tender and beans are as well.
  • 4. Serve hot. Gram would always make a huge skillet of these and usually would serve with fresh corn on the cob and sweet juicy tomato slices fresh from her garden. Enjoy!

Tips:

  • For a crispy coating, use a combination of flour, cornstarch, and seasonings to coat the potatoes before frying.
  • Use a large skillet or Dutch oven to fry the potatoes in a single layer to ensure even cooking.
  • Heat the oil to the correct temperature before adding the potatoes. The ideal temperature for frying is between 350°F and 375°F.
  • Fry the potatoes in batches to prevent overcrowding and ensure even cooking.
  • Season the potatoes with salt and pepper, or your favorite seasonings, after frying for a flavorful dish.
  • For a healthier option, bake the potatoes instead of frying them. Toss the potatoes with olive oil, seasonings, and herbs, and bake at 400°F for 20-25 minutes, or until golden brown and crispy.

Conclusion:

Country potatoes are a versatile and delicious side dish that can be enjoyed for breakfast, lunch, or dinner. With a variety of seasoning options and cooking methods, there's a country potato recipe to suit every taste. Whether you prefer them crispy and fried, or soft and baked, country potatoes are sure to be a hit at your next meal.
