1/4 cup olive oil
2 1/2 lbs chicken, cut into small serving pieces
1 lb Italian sausage, cut in 1-inch pieces (sweet or hot or both)
1 small red bell pepper, julienned
2 garlic cloves, minced and crushed
6 hot cherry peppers, sliced (bottled in vinegar)
1 onion, sliced
1/2 teaspoon salt
1/8 teaspoon fresh ground black pepper
1/4 teaspoon dried rosemary leaves, crushed
1 cup chicken broth (canned or fresh)
1/2 cup dry white wine (such as Pinot Grigio)
2 tablespoons all-purpose flour
1 -2 teaspoon fresh lemon juice
2 potatoes, peeled and diced small
3/4 lb fresh mushrooms, sliced

Steps:

  • In a skillet, heat oil. Add chicken and sausage in batches; brown on all sides. removing pieces to a plate as they brown.
  • Discard all but 2 tablespoons drippings from pan. To hot drippings, add the mushrooms, red bell peppers, sliced cherry peppers, onion, potatoes, and garlic; saute until tender.
  • Return chicken and sausage to skillet. Add salt, black pepper, the rosemary , the broth, the wine, and lemon juice. Bring to a boil; lower heat and simmer, covered, until chicken is tender, about 25 minutes.
  • Remove chicken and sausage from skillet; arrange on warm serving platter.
  • Skim fat from mixture in skillet.
  • In a small glass measure, mix flour with 1/4 cup water until blended. Stir into liquid in skillet. bring to boiling, stirring constantly; boil for 1 minute, stirring, until mixture thickens.

2 (15.25 ounce) cans sweet corn
1 teaspoon salt

2 -3 lbs chicken pieces
1/2 cup seasoned flour
1 tablespoon butter
1 onion
2 carrots
1 parsnip
7 ounces mushrooms, drained
4 slices bacon
2 (10 3/4 ounce) cans campbells condensed chicken vegetable soup

Steps:

  • Coat the chicken with seasoned flour. I use Kentucky Kernel flour. Melt the butter in large fry pan and brown the chicken pieces. Transfer to a 9x13 baking dish.
  • Peel and slice the onion, chop parsnip, and carrot.
  • Chop the bacon and add to pan that cooked the chicken. If too greasy drain off some grease. Cook bacon for a few minutes on its own.
  • Add above vegetables to bacon and cook 5 minutes, making sure bacon is cooked. Add mushrooms at end of 5 minutes. I find they spit if you add with rest of vegetables.
  • Add soup and bring to a boil. Add T parsley.
  • Remove from heat and pour over chicken.
  • Cover and bake in 350 degree oven for 1 hour.

3 cups buttermilk
1 egg, beaten

  • In a large Ziploc bag, combine the flour, 1 dressing packet mix, salt and pepper.
  • In a shallow baking dish, combine 2 cups of buttermilk, beaten egg and 1 dressing packet mix; soak cube steaks in mixture.
  • While steaks are soaking, make the gravy: in a small pot, combine 1 cup buttermilk, broth and dry graving mix; simmer over medium heat and stir well and keep warm.
  • One by one, add each steak into Ziploc bag and shake to coat; dip steak back again in buttermilk mixture and recoat and shake in Ziploc bag.

  • In a large bowl, toss mushrooms, potatoes, carrots and onion with 2 tablespoons herb mixture. Spoon into roasting pans, dividing equally between the two.

1/2 c. fine dry bread crumbs
2 tbsp. grated Parmesan cheese
1 tsp. EACH basil leaves and oregano leaves
1/2 tsp. garlic salt

2 chicken breasts, split (about 1.5 lbs)
1/4 c. dry white wine or apple juice
1/4 c. chopped green onion
1/4 c. chopped parsley

Steps:

  • Preheat oven to 375 degrees. In heavy 2-qt saucepan melt butter. Meanwhile, on piece of wax paper combine bread crumbs, Parmesan cheese, basil, oregano, garlic salt and salt. Dip chicken breasts in melted butter then roll in crumbs to coat. Place skin side up on ungreased 9" sq. baking dish. Bake near center of 375 degree oven for 50 to 60 min or until golden brown and chicken is tender. Meanwhile, add wine, green onion and parsley to remaining melted butter (about 1/2 c.). 1 large onion, chopped
2 clove garlic diced
3/4 c ketchup
2 Tbsp worcestershire sauce
2 Tbsp white wine vinegar

salt and pepper to taste

Steps:

  • 1. How to Make it: Heat oil in a medium saucepan over medium heat. Add the onion and garlic and saute for 5 to 10 minutes, or until onion is tender. Then add the ketchup, Worcestershire sauce, vinegar, brown sugar and water. Mix together well and season with salt and pepper to taste. Reduce heat to low, cover and simmer for 20 minutes. Set aside, covered, and let cool. Place chicken in a shallow, nonporous dish and pour 1/2 sauce over chicken, reserving 1/2 sauce in a separate container for basting. Cover chicken and marinate in the refrigerator overnight. Cover reserved sauce and keep in the refrigerator. Preheat an outdoor grill for medium high heat and lightly oil grate. 1/4 cup olive oil
salt and freshly ground black pepper
1 (10-ounce) package white mushrooms halved or quartered if large
6 medium boiling potatoes, peeled and cut into eights
2 medium carrots, cut into 1-inch chunks
1 medium onion, cut into eights
1 chicken (about 3 1/2 pounds), cut into 8 serving pieces

Steps:

  • 1 Prepare the chicken broth, if necessary. Place a rack in the center of the oven. Preheat the oven to 450°F. Choose a baking pan large enough to hold all of the ingredients in a single layer, or use two pans. Oil the pan or pans. 2 Place the garlic, parsley, and rosemary in a small bowl and mix with the oil. Add salt and pepper to taste. 3 Scatter the mushrooms, potatoes, carrots, and onions in the pan. Add half the herb mixture and toss well. Brush the remaining herb mixture over the chicken pieces. Place the chicken skin-side up in the pan, arranging the vegetables around them. 4 Bake for 45 minutes. Baste the chicken with the pan juices. If the chicken seems dry, add a little of the chicken broth. Continue to bake, basting occasionally, 15 minutes more, or until the chicken juices run clear when pierced in the thickest part of the thigh with a knife and the potatoes are tender. If the chicken is not brown enough, run the pans under the broiler for 5 minutes or until the skin is browned and crisp. 5 Transfer the chicken and vegetables to a serving platter. Tip the pan and skim off the fat with a large spoon. Place the pan over medium heat. Add about 1/2 cup of the chicken broth and scrape the bottom of the pan. Bring the juices to a simmer and cook until slightly reduced, about 5 minutes. 6 Pour the juices over the chicken and vegetables and serve immediately. From "1,000 Italian Recipes."
