2 (14.5 ounce) cans green beans, drained and rinsed
1 large onion, chopped
10 small red potatoes, peeled and cubed
1 tablespoon seasoned salt

  • Place the turkey tails and onion into a 4 quart Dutch oven and fill half way full with water. Season with salt, pepper and garlic powder. 8 slices Thick-sliced hickory-smoked bacon (reserve 2 raw slices)
1 Sweet Vidalia onion (sliced)
6 cups Fresh organic green beans (cleaned, stems and tips removed)
5 large Red-skinned potatoes (cut into bite-sized pieces, skin on)
4 cups Organic Chicken stock (+ enough to cover)
Kosher salt (own taste)
Freshly ground pepper (own taste)
1 tablespoon Bacon drippings or real butter

Steps:

  • Heat a medium-sized cast-iron skillet on low to medium heat before adding thickly sliced pieces of hickory smoked bacon, cook slowly until the bacon has browned and become crisp. Do not overcook the bacon.
  • Place the bacon on baker's rack to drain excess bacon grease and keep the crispiness of the bacon.
  • Drain most of the bacon grease from the cast iron skillet and place it on medium heat. Add the sliced onions and cook for about 3 minutes. Remove the cast-iron skillet from the heat.
  • Place 6 cups of fresh clean, tips removed, sliced green beans in a Dutch oven, and 2 slices of the reserved raw bacon. Add the cut-up bite-sized red-skinned potatoes, cover with about 4 cups of chicken stock or more if needed.

1 cup butter
1 1/2 cups chopped onions
2 lbs smoked ham hock
2 1/2 lbs fresh green beans, trimmed and cut into 1 inch pieces
2 tablespoons fresh ground pepper (I use less)
6 cups water
salt

  • Melt 1 stick of butter in a heavy 3 quart pan.
  • Add onions and cook over low heat for a few minutes but not let the onions get brown.
  • Except for the remaining stick of butter and salt add all of the remaining ingredients to the onions.
  • Partially cover and bring to a boil and boil for 5 minutes.
  • Then lower the heat and cover completley.
  • Simmer at least 15 minutes or until green beans are cooked to the tenderness you like.
  • Drain off the liquid and remove ham hock.
  • Take the skin off the ham hock and cut meat from the bone.
