COUSCOUS CHICKPEA SALAD WITH GINGER LIME DRESSING

Couscous Chickpea Salad With Ginger Lime Dressing image

A nice summer, make ahead salad. I've been taking salads to work for lunch, as I often don't feel like hot food during the summer. This has a nice kick to it. Sometime I will try substituting dried cranberries for the raisins. Also if you don't have the turmeric, it's ok, it just adds nice color to the couscous. From Cooking Light June 2004.

Tips:

- Use a fine-mesh strainer to rinse the chickpeas thoroughly before cooking. This will help to remove any excess starch and make them more flavorful. - For the best texture, cook the chickpeas in a pot with plenty of water. Bring the water to a boil, then reduce heat to medium-low and simmer for about 1 hour, or until the chickpeas are tender but still hold their shape. - To make the ginger-lime dressing, whisk together the lime juice, olive oil, ginger, garlic, honey, and salt and pepper to taste. - For the couscous, follow the package directions for cooking. Once the couscous is cooked, fluff it with a fork and set it aside to cool. - To assemble the salad, combine the cooked chickpeas, couscous, cucumber, red onion, and parsley in a large bowl. Pour the ginger-lime dressing over the salad and toss to coat. Serve immediately or chill for later.

Conclusion:

This couscous chickpea salad with ginger-lime dressing is a healthy and refreshing dish that is perfect for a summer lunch or dinner. It is packed with protein, fiber, and vitamins, and the ginger-lime dressing adds a bright and flavorful touch. The salad is also easy to make and can be tailored to your own preferences. For example, you can add other vegetables, such as tomatoes or bell peppers, or you can use a different type of dressing, such as a tahini dressing.
