Couscous Risotto With Wild Mushrooms And Pecorino Cheese image

The larger Israeli couscous gives this recipe a similar texture to risotto made with arborio rice but with a reduced cooking time. Yield Makes 6 first-course servings

Number Of Ingredients 10

9 1/2 tablespoons butter, divided
1 1/2 pounds fresh wild mushrooms
(such as cèpe [porcini], hen of the woods, chanterelle, or stemmed shiitake); large mushrooms sliced, small mushrooms halved or quartered
7 cups (about) low-salt chicken broth
1 tablespoon extra-virgin olive oil
3/4 cup finely chopped leek (white and pale green parts only)
1 1/4 cups arborio rice (8 to 9 ounces)
1/4 cup dry white wine
1/4 cup dry white vermouth
1/4 cup grated Parmesan cheese plus additional for serving (optional)

Add white wine and vermouth and stir until liquid is absorbed, about 1 minute. Add 3/4 cup warm chicken broth; stir until almost all broth is absorbed, about 1 minute. Continue adding broth by 3/4 cupfuls, stirring until almost all broth is absorbed before adding more, until rice is halfway cooked, about 10 minutes. Stir in sautéed mushrooms. Tips:

  • Use high-quality ingredients: The better the ingredients, the better the risotto will be. Use fresh, flavorful mushrooms, and a good quality pecorino cheese.
  • Toast the couscous: Toasting the couscous before cooking it helps to bring out its nutty flavor and gives the risotto a more complex texture.
  • Cook the risotto slowly and carefully: Risotto is a dish that requires patience and attention. Cook it slowly over low heat, stirring frequently, to ensure that the rice cooks evenly and absorbs all of the flavorful liquid.
  • Don't overcook the risotto: Risotto should be cooked until it is creamy and tender, but still has a slight bite to it. Overcooked risotto will be mushy and unappetizing.
  • Stir in the butter and cheese at the end: Adding the butter and cheese at the end of the cooking process helps to create a rich, creamy sauce that coats the rice perfectly.
  • Serve the risotto immediately: Risotto is best served immediately, while it is still hot and creamy. If you need to make it ahead of time, reheat it gently over low heat, stirring frequently.

Conclusion:

This couscous risotto with wild mushrooms and pecorino cheese is a delicious and sophisticated dish that is perfect for a special occasion. It is easy to make, but it looks and tastes like a restaurant-quality meal. The combination of earthy mushrooms, creamy pecorino cheese, and nutty couscous is sure to please everyone at your table.
