Time 1h5m

Yield 9 Half Pints

Number Of Ingredients 7

3 lbs jalapenos, fresh and firm
2 cups cider vinegar
6 cups granulated sugar
1/2 teaspoon turmeric
1/2 teaspoon celery seed
3 teaspoons granulated garlic
1 teaspoon ground cayenne pepper

Steps:

  • Wearing gloves, remove the stems from all of the jalapeno peppers. The easiest way to do this is to slice a small disc off of the stem-end along with the stem. Discard the stems.
  • Slice the peppers into uniform 1/8-1/4 inch rounds. Set aside.
  • In a large pot, bring cider vinegar, white sugar, turmeric, celery seed, granulated garlic and cayenne pepper to a boil. Reduce heat and simmer for 5 minutes.
  • Add the pepper slices and simmer for exactly 4 minutes.
  • Use a slotted spoon to transfer the peppers, loading into clean, sterile canning jars to within 1/4 inch of the upper rim of the jar.
  • Turn heat up under the pot with the syrup and bring to a full rolling boil. Boil hard for 6 minutes.
  • Use a ladle to pour the boiling syrup into the jars over the jalapeno slices. Insert a cooking chopstick to the bottom of the jar two or three times to release any trapped pockets of air. Adjust the level of the syrup if necessary. Wipe the rims of the jars with a clean, damp paper towel and fix on new, two-piece lids to finger-tip tightness.
  • *If you have leftover syrup, and it is likely that you will, you may can it in half-pint or pint jars, too. It's wonderful brushed on meat on the grill or added to potato salad or, or, or... In short, don't toss it out!
  • Place jars in a canner, cover with water by 2-inches. Bring the water to a full rolling boil. When it reaches a full rolling boil, set the timer for 10 minutes for half-pints or 15 minutes for pints.
  • When timer goes off, use canning tongs to transfer the jars to a cooling rack. Leave them to cool, undisturbed, for 24 hours. When fully cooled, wipe them with a clean, damp washcloth then label.
  • Allow to mellow for at least two weeks, but preferably a month before eating. Or don't.

These jarred jalapenos are sweet, tangy, and spicy! The chunks of pineapple are super tasty to munch on too. There are so many ways to serve this - on hamburgers or hot dogs, in salads, as an appetizer (we poured it over a brick of cream cheese), or eat them straight out the jar. Easy and fun to make, they'd make a great...

COWBOY CANDY (SWEET PICKLED JALAPENOS)

Cowboy Candy (Sweet Pickled Jalapenos) image

I don't eat raw jalapenos, they are too hot and spicy for me,! But when you add vinegar and sugar to the pickling liquid, you are left with the flavor without the heat. Now that I can do! These pickles are sweet and tangy, with just the right amount of bite. But be careful, these are awfully addicting! Serve them on cream...

TEXAS COWBOY CANDY

Texas Cowboy Candy image

If you are a pansy you can remove the seeds/membrane from the jalapenios, that takes out most of the heat. Can be eaten immediately, however best when cured for 1-2 weeks. My family loves to spread this candy along with cream cheese on a wheat thin.

COWBOY CANDY

Cowboy Candy image

I bought a jar of these little dandies at a craft fair last year, and have been looking for some in stores without success. So instead I decided to find a recipe and make some. These are very hot with the seeds, or less so if seeded first. A cowboy candy slice is delicious served with cream cheese on a cracker. For a nice appetizer presentation, place 3 oz block of cream cheese on a plate. Top with 2 tbsp of cowboy candy, and place crackers around the edges of the plate. Note of warning: when slicing the jalapeno, I suggest wearing disposable latex gloves. Also, the fumes, while slicing and cooking, are strong (but fabulous)! This recipe represents the state of Texas.

MILD COWBOY CANDY (NO COOK)

Mild Cowboy Candy (No Cook) image

I know I got this recipe of this site but I just went to rate it and can't find it. So I am going to list what I do. I always have a jar of these in the fridge. I like Walmart brand mild jalapenos the best.

Time P4DT5m

Yield 1 jar, 5-6 serving(s)

Number Of Ingredients 3

1 (10 ounce) jar of store bought mild jalapenos
1/4-1/3 cup white sugar
1 minced garlic clove

Steps:

  • Drain the jalapenos (keep the jar) in a colander and rinse with water for 1 minute.
  • Most seeds are going to drift to the bottom.
  • Put about 1 TBS of sugar and the minced garlic in the bottom of the jar.
  • Add approximately 1/4 cup of the jalapenos and then alternate putting in the remaining sugar and rinsed drained jalapenos I leave most of the seeds in the colander and throw them away because I am a heat wimp.
  • Put the lid on tight and roll the jar around to distribute the sugar and garlic.
  • Put in the refrigerator for 48 hours.
  • After 48 hours you'll see syrup forming on the bottom. Check that the seal is tight on the jar and shake the jar a couple of times and then flip the jar over and put the jar back in the fridge up side down for 48 hours. The syrup will now run to the bottom and work on dissolving the remaining sugar.
  • Serve with savory items.

JOHNNY JALAPENO'S COWBOY CANDY

Johnny Jalapeno's Cowboy Candy image

Fresh jalapenos is needed for this recipe which easily doubles/triples to do in batches for canning. This is JJ's chutney that will give your mouth a funky little roller coaster ride of hot & sweet. Serve it with cream cheese on crackers, or as chutney on Tortilla chips. Great for gift baskets! Remove the seeds from the jalepenos for 'Cowgirl Candy'. I have sometimes made this with an assortment of hot peppers from our garden.

CANDIED JALAPENOS - COWBOY CANDY RECIPE - (4.5/5)

Candied Jalapenos - Cowboy Candy Recipe - (4.5/5) image

Provided by JimMac

Number Of Ingredients 10

4 pounds fresh jalepeno peppers, sliced
2 pounds onions, diced
1/2 cup vinegar
1/2 cup water
6 to 8 cups sugar
2 tablespoons mustard seed
1 teaspoon turmeric
2 teaspoon celery seed (optional)
1 tablespoon garlic powder
1 teaspoon ginger

Steps:

  • Slice Jalapenos into thin slices and dice onions. (Wear a pair of rubber gloves for handling jalapenos, personal experience, do not touch your face!) Place in pan with water and vinegar, bring to a boil, cover, reduce heat and simmer about 10 minutes or until tender. (Do not breath fumes.) Add the sugar and spices and bring to soft candy temperature to completely dissolve sugar, about another 10 minutes. Place boiling mixture into jars, leaving 1/4 inch head space. Adjust caps. Seal in a canner, or store in your refrigerator. Best to let them sit in the jars at least two weeks to soak up all of the goodness.

Tips:

  • Choose the right peppers: For this recipe, it's best to use a combination of sweet and spicy peppers. Some good options include bell peppers, jalapeƱos, and habaneros. Just be sure to adjust the amount of each pepper depending on your desired heat level.
  • Use fresh peppers: Fresh peppers will give your cowboy candy the best flavor. If you can, try to find peppers that are in season.
  • Slice the peppers evenly: This will help them cook evenly.
  • Don't overcrowd the pot: When cooking the peppers, be sure to give them enough space so that they can cook evenly. If you overcrowd the pot, the peppers will steam instead of caramelize.
  • Cook the peppers until they are caramelized: This will take some time, but it's worth it. The longer you cook the peppers, the sweeter and more flavorful they will become.
  • Use a candy thermometer: This will help you ensure that the cowboy candy reaches the correct temperature. The ideal temperature is 220 degrees Fahrenheit (104 degrees Celsius).
  • Let the cowboy candy cool completely: Once the cowboy candy is cooked, let it cool completely before storing it. This will help it to set and develop its full flavor.

Conclusion:

Cowboy candy is a delicious and versatile treat that can be enjoyed in many ways. It can be used as a topping for ice cream or yogurt, added to trail mix, or simply eaten on its own. It's also a great gift for friends and family. So next time you're looking for a sweet and spicy treat, give cowboy candy a try.
