COWBOY CASSEROLE (CROCKPOT)
Steps:
- Brown the ground beef, and drain well.
- Place the browned beef, and the remaining ingredients except the cheese in a crock pot (slow cooker) and combine well.
- Cover and cook on high for 4 hours or on low for 8 hours.
- Sprinkle cheese on top, cover.
- Serve when cheese is melted (about 10 minutes).

- 1. While the ground beef is browning, place potatoes in bottom of slow cooker, and salt and pepper generously. 2. Add onions and minced garlic. 3. Layer ground beef on onions and garlic, and top with kidney beans, diced tomatoes, and water 4. Cover and cook on low for 7-8 hours. 5. When there is about 15 minutes of cook time left, sprinkle cheese on top of dish and cover again until cheese is melted.

Steps:
- Layer onions, ground beef, potatoes, garlic and beans in slow cooker in that order.
- Mix your diced tomatoes& flour in a separate bowl.
- I like to take my immersion blender to it, kids don't like tomato chunks.
- Pour tomato mixture over top of things in pot and sprinkle with salt& pepper.
- Cover& cook on low for 5-6 hours, or until potatoes are done (the thinner the faster).
