COWBOY OATMEAL COOKIES
It's a great cookie, one of the kids' favorites. This doesn't call for nuts, but I sometimes add about 1/2 cup of chopped walnuts or pecans.

COMBINE flour, cinnamon, salt and baking soda in medium bowl. Add gradually to shortening mixture at low speed. Stir in oats, nuts, chocolate chips, brickle bits and apple chips with spoon. 4. DROP 2 measuring tablespoonfuls into a mound for each cookie. Place 3 inches apart on prepared baking sheet. Flatten with hard spatula to 1-inch thickness. 5. BAKE 11 to 13 minutes or until light brown around edges. Cool 2 minutes on baking sheets; transfer to cooling racks to cool completely.
Tips:
- Use fresh, rolled oats. Old or quick-cooking oats will not produce the same chewy texture.
- Do not overmix the dough. Overmixing will result in tough cookies.
- Chill the dough before baking. Chilling the dough will help the cookies hold their shape and prevent them from spreading too much.
- Bake the cookies until they are golden brown. The cookies should be slightly soft in the center.
- Let the cookies cool completely before serving. The cookies will continue to firm up as they cool.
