Categories     side-dish

Time 35m

Yield 6 to 8 servings

Number Of Ingredients 9

Two 8.5-ounce boxes cornbread mix (I like Jiffy here)
2 tablespoons BBQ seasoning, ancho chile powder or chipotle seasoning
One 14-ounce can creamed corn
2 large eggs, whisked
Peanut oil, for frying
Kosher salt
1/4 cup creamed honey
1/4 cup hot sauce (I like Cholula here)
2 tablespoons confectioners' sugar

Steps:

  • For the batter: In a large bowl, whisk together the cornbread mix and seasoning blend, breaking up any clumps in the mix. Add the creamed corn and eggs and stir to combine gently; the mixture should be scoopable but hold its form. (Think the perfect ice cream ball.) Allow to rest in the refrigerator for 10 minutes.
  • For the frying: In a large pot or fryer, bring at least 2 inches of peanut oil to 375 degrees F. Using 2 spoons or a medium ice cream scoop, scoop out some batter and slowly lower it into the oil. Drop in a few more and cook, flipping if needed, until the hush puppies float and are golden all around, 2 to 4 minutes. Remove to a wire rack over a baking sheet and season with a sprinkle of salt. Repeat with the remaining batter.
  • For the sauce: In a small bowl, whisk together the honey, hot sauce and sugar. Use as a dipping sauce for the hush puppies.

Time 30m

Yield 18 servings

Number Of Ingredients 19

1 1/2 cups cornmeal
1/2 cup all-purpose flour
2 teaspoons baking powder
2 teaspoons kosher salt
2 teaspoons sugar
1 teaspoon garlic powder
1 1/2 cups buttermilk
1 large egg
8 ounces jumbo lump crab
3 scallions, white and light green parts only, thinly sliced (reserve the dark green parts for the dip)
Canola oil, for frying
Sea salt, for sprinkling
1 cup fresh cilantro leaves
1/2 cup mayonnaise
1/2 teaspoon garlic powder
1/2 teaspoon sea salt
1/4 teaspoon freshly ground black pepper
Reserved dark green parts of 3 scallions, chopped
1/2 jalapeno, seeds and membrane removed, chopped

Steps:

  • For the crab hush puppies: In a medium bowl, whisk the cornmeal, flour, baking powder, kosher salt, sugar and garlic powder. In a separate small bowl, whisk the buttermilk and egg. Make a well in the dry ingredients and begin to gently stir in the buttermilk mixture (I use a wooden spoon). Do not overmix. Gently stir in the crab and scallions until just mixed.
  • For the cilantro-jalapeno dip: Combine the cilantro, mayonnaise, garlic powder, sea salt, pepper, reserved scallion greens and jalapeno in a blender and blend until pureed. Refrigerate until serving time. This can be made a day in advance.
  • Heat several inches of canola oil in a Dutch oven to 350 degrees F. (There should be enough oil for the hush puppies to be completely submerged.) Use a 1-inch ice cream scoop to drop the batter into the hot oil in batches. Fry until deep golden brown, about 4 minutes. While the hush puppies are hot, sprinkle with a pinch of sea salt. Serve immediately with the dip.

Tips:

  • Use fresh crab meat. Fresh crab meat has a sweeter, more delicate flavor than frozen crab meat. If you can't find fresh crab meat, frozen crab meat will work, but it's important to thaw it completely before using it.
  • Don't overmix the batter. Overmixing the batter will make the hush puppies tough. Mix the batter just until the ingredients are combined.
  • Fry the hush puppies in hot oil. The oil should be hot enough to sizzle when you drop the hush puppies in. This will help them cook evenly and prevent them from sticking to the pan.
  • Serve the hush puppies hot. Hush puppies are best served hot out of the fryer. You can serve them with your favorite dipping sauce, such as tartar sauce, cocktail sauce, or remoulade.

Conclusion:

Crab hush puppies are a delicious and easy-to-make appetizer or snack. They're perfect for parties or potlucks. With their crispy outsides and fluffy insides, they're sure to be a hit with everyone. So next time you're looking for a tasty treat, give crab hush puppies a try!
