CRACKER PORK LOIN
I had my first "cracker" pork loin at a friends parents house and I LOVED it. I am not a huge fan of pork loin but I love it when it is tender, juicy, and flavorful. I love cooking with greek seasoning and pork. I also LOVE serving pork loin with yellow rice. I know it sounds weird but it is oh so yummy. I love to use Cavendar's Greek Seasoning. If you have the sodium free cavendar's you might want to add more salt in your recipe and use a little more of the seasoning. Remember cooking time will vary with the thickness of your meat. - If you have a Mortar and Pestle use it to gind up your Saltine Crackers. You want these to be as fine as you can get. It is ok if you have bigger pieces of the cracker but you really want it the crackers to be finely ground if you can. If you have a food processor use that. Anything will work. So do what works for you.
- I like to season up the crackers so I add salt, pepper and greek seasoning to the crackers. Some greek seasonings do not have salt so please be sure to add EXTRA greek seasoning and a little bit more salt. I liberally add the seasonings to the crackers. I also add the seasoning mixture to my milk and eggs mixture as well. Do what sounds good to you.
- Next you are going to want to Beat 1 egg and slowly add two tablespoons of milk. This is the glue for your meal. This is how your crackers will stick so well to your Pork Loins.
- Put a little Extra Virgin Olive Oil in a Non Stick Pan and turn the heat onto med. high heat. While it is warming up Dredge your pork loins into your eggs mixture and then into your crackers. Be sure that the TOP AND BOTTOM of your Porn Loin has a decent coat of crackers. Then add your pork loins into the pans. You want your pan to be hot but not screaming hot.
- For thin slices of pork loin I usually do about 7 minutes on each side. FEEL FREE to cut the thickest piece of meat you have to see if it is finished cooking. Each side of your pork loin should have a beautiful golden brown color. Remember thicker pieces of pork loin MUST be cooked longer. If you notice that the coating for your pork is browningway too fast drop the heat. Your pan is way too hot and you will not cook this meal properly.

- In a medium bowl, whisk together the eggs and milk until well blended. Run the pork chops under water then roll in the cracker crumbs. Dip into the egg mixture, then back into the cracker crumbs. Make sure the chops are thickly coated.
- Heat the oil in a large skillet over medium-high heat. Fry chops until golden brown on both sides. Add water to the skillet, just enough to almost come to the top of the pork chops. Dissolve the chicken bouillon cube in the water. Reduce heat to medium-low, cover, and simmer until the pork chops absorb most of the water, about 15 to 20 minutes.
- To deep fry, skip the water and bouillon cube. Heat frying oil to 350 degrees F (175 degrees C). Fry coated chops for about 10 minutes or until golden brown. Season with salt and pepper immediately after. They come out moist and delicious.

PORK LOIN AND CRACKLING WITH HASSEL BACK POTATOES
Steps:
- Preheat the oven to 475 degrees F.
- Score the rind, using long, parallel slits 1/8 to 1/4-inch apart across the width of the loin; be careful to cut only halfway to the flesh (see Cook's Note**). Rub the rind with the salt, ensuring that the salt is rubbed well into the slits. Rub the rind with 1/2 of the olive oil.
- Flip the loin over and rub the flesh side with the remaining olive oil. Place the garlic, thyme, and rosemary up against the flesh. Using butcher's twine, tie the herbs to the loin.
- Place the loin on a rack in a roasting pan and roast for 30 minutes. Remove from the oven and arrange the potatoes at the bottom of the roasting rack. Reduce the heat to 425 degrees F. Return the roast to the oven to cook for 1 additional hour or until an instant-read thermometer poked into the center of the loin reaches 150 degrees F. Remove from the oven and let the loin rest for 30 minutes; the internal temperature will continue to rise about 10 degrees F, and the loin will finish cooking while it's resting (see Cook's Note***).
- Slice the "crackling" (crunch skin) off in 1 piece and cut into 1/4-inch strips. Slice the pork loin into 1/4-inch slices. Serve the pork loin warm with Cracklings, Hassel Back Potatoes, and Apple Chutney.
- Place a potato in the palm of a wooden spoon. Use a sharp knife to make cuts 3/4 of the way down the width of each potato about 1/8-inch apart. Toss the potatoes with olive oil, 1 tablespoon salt, and pepper in a large mixing bowl.
- Place the potatoes in the bottom of a roasting pan, evenly spaced apart. Cook underneath the roast during the last hour of cooking, until fork tender. Remove from the oven and sprinkle with additional salt and pepper, to taste.
- In a large saute pan, melt the butter over medium heat. Add the onion and 1 tablespoon of salt and cover. Saute until onions are translucent. Add the apple cider and increase to high heat. Reduce the cider until nearly evaporated. Add the vinegar and 1 cup sugar; stir until the sugar dissolves. Add the apples and star anise. Cover and reduce the heat to medium. Cook for 10 minutes.
- Remove the cover and continue to cook until thickened, about 10 minutes; stirring frequently. Add the 1/3 cup of remaining sugar. Remove star anise and mash until smooth. Transfer to a plate to cool.
- Serve warm or at room temperature with pork, chicken, or curried dishes.
CRUSHED CRACKER PORK
My 4 yrs old newphew and I really liked this recipe. We thought it tasted so good. When I made this I used thin sliced boneless pork chops as that's what I had on hand. I had to double the egg mixture and the bread crumbs. I also had to bake the chops in the oven at 350 for 15 minutes after frying.
