Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a muffin pan, or use paper liners.

Base recipe was found in the All You Magazine but I've tweaked it to make it my own. This is a full flavored cake with a lemony glaze topping which I found to take this cake just over the top of expectations. Of course you can omit the glaze and just serve as a loaf cake for breakfast. The original recipe does not include nuts but I really enjoyed it with some chopped walnuts so I've placed that as optional to this recipe. It also called for raisins but I used Craisins instead. Please note it is very important to use a thicker applesauce for this recipe - using a thin commercial canned sauce can cause the batter to become too thin and not allow the cake loaf to rise properly while baking.

Slightly tart cranberry applesauce, a favorite of my step-daughter and my 16-month-old grandchild. I use orange juice and pears to sweeten the sauce in lieu of granulated sugar. I finish with a small amount of honey -- so small that the pediatrician cleared this for the grandchild at 6 months. I use a 6-1/2 quart Le Creuset pot, and puree to desired consistency in a Vitamix. For the 6-mo.-old, her mom froze this in ice cube trays; today her dad froze this in 1-quart heavy-duty resealable freezer bags. If you prefer a decidedly sweet sauce, add 1/2 cup brown sugar to the orange juice and heat until sugar has dissolved before adding apple slices, etc., or adjust at the end by adding simple syrup to desired sweetness. This mixture will keep in an airtight container in the refrigerator for 4 days.

2 1/2 cups white onions, diced and divided
1 large egg
2 tablespoons all-purpose flour
1 1/4 teaspoons kosher salt
1 teaspoon baking powder
2 lbs russet potatoes
vegetable oil (for frying)

Steps:

  • Line a colander with cheesecloth and place over a large bowl. In another large mixing bowl, combine half of the diced onions (1 1/4 c), egg, flour, salt and baking powder. Mix with a rubber spatula to combine.
  • Peel potatoes and cut into 1" cubes, working quickly so the potatoes do not brown. Using the grater attachment on your food processor, grate the potato with the remaining 1 1/4 c of diced onions. Pour the potato/onion mixture into the cheesecloth lined colander over a bowl, wrap cloth around mixture and wring out as much liquid as possible. Discard the liquid, but save the potato starch that is clinging to the bottom of the bowl and to the cheesecloth.
  • Add potato/onion mixture, along with the potato starch to the egg/flour/onion in other bowl.Stir the batter until it is combined and sticky.
  • Preheat oven to 425*F. Place a wire rack on a rimmed baking sheet and set it beside your stove top.
  • Heat 1/2 c vegetable oil in a heavy bottomed skillet over medium high heat. Oil should be hot, but not smoking (about 375*F, but I don't use a thermometer). For each Latke, use approx 1/4 c of batter and flatten in your hand (or on a slotted spoon) into approx 2" disk, squeezing out any additional liquid. Using a slotted spoon, gently place Latkes into the hot oil. (Use one sacrificial Latke to make sure the oil temp is correct. If it's too low, they will be greasy and soggy, too high they will burn). Only cook about 4 Latkes at a time so you do not drop the oil temperature. Cook Latkes approx 4 minutes on each side. Place fried Latkes onto the wire rack.
  • Between batches, using a slotted spoon, remove any bits that may be forming in the bottom of the pan and discard. Add more oil if needed between batches, but be sure to let it rise to the correct temperature before starting another batch.
  • When completely done frying all the Latkes, place the baking sheet into the oven for approx 8 minutes to finish baking them until crisp and golden brown.

1 (2.5 pound) boneless pork loin roast, halved lengthwise
1 teaspoon dried oregano
½ teaspoon salt
½ teaspoon ground black pepper
½ cup dried cranberries
1 cup unsweetened applesauce
¼ cup Chinese cooking wine
¼ cup all-purpose flour, or as needed
½ cup water, or as needed

Steps:

  • Arrange celery in a layer on the bottom of the slow cooker and spread out the two halves of pork loin on top. Sprinkle oregano, salt, and pepper over both sides. Spread cranberries on top. Pour applesauce and cooking wine over the roast.
  • Cook on Low until pork is fork-tender, about 8 hours.
  • Lift pork, cranberries, and celery out into a serving dish. Pour remaining cooking liquid into a saucepan; bring to a boil. Mix flour with water until no longer clumpy and add to the saucepan, stirring until gravy is thickened.
  • Shred pork with a fork and pour the gravy on top.

1 1/2 sticks unsalted butter
2 c granulated sugar
2 eggs
2 tsp vanilla
2 2/3 c all-purpose flour
3 tsp baking powder
1 tsp salt
1 c milk

  • 1. Preheat the oven to 350. Lightly butter and flour a 13 x 9-inch baking pan. 2. Prepare the fruit sauce: Combine the applesauce, cranberries, sugar, and cinnamon in a saucepan and bring to a simmer over medium-high heat. SImmer, stirring frequently, just until the cranberries begin to pop open, about 5 minutes. Remove from heat and set aside to cool. 3. Prepare the topping: In a mixing bowl, stir the flour with the brown sugar. Using the tines of a fork, cut in the butter to form coarse crumbs. Set aside. 4. Prepare the cake: In a large mixing bowl, cream the butter and sugar together with an electric mixed on hight speed until light and fluffy.
