¼ cup vegetable oil
10 ounces dried sweetened cranberries
½ cup white sugar, or to taste
½ cup water, or more as needed
2 small jalapeno peppers, seeded and finely diced
1 tablespoon lemon juice
2 teaspoons dried cilantro
¼ teaspoon salt
2 (8 ounce) packages cream cheese, softened

Steps:

12 ounces fresh cranberries, diced
1/4 cup green onion, chopped
1 fresh jalapeno pepper, seeded and diced
2 tablespoons cilantro, chopped (optional)
1 1/4 cups sugar
1 tablespoon lemon juice
1 dash salt
2 (8 ounce) packages cream cheese, softened

Steps:

  • 1. In a medium-sized bowl, add chopped cranberries, green onion, cilantro and jalapeno. (NOTE: Don't use a food processor to chop these. It is slightly time consuming, but the cranberries will liquify if they are not hand-chopped.).
  • 2. Pour sugar, lemon juice and salt over cranberry mixture and stir gently until blended.
