You can substitute the ground chicken with ground beef!

Provided by Angela Pietrantonio

Categories     Chicken

Time 1h5m

Number Of Ingredients 11

1 can(s) (16 oz.) whole cranberry sauce
2 Tbsp brown sugar
1 lb ground chicken
1 1/2 c soft bread crumbs
1 medium onion, chopped
1/2 medium green bell pepper, chopped
1/3 c milk
1 egg
1/2 tsp salt
1/4 tsp each parsley flakes and thyme leaves
1/8 tsp oregano leaves

Steps:

  • 1. Preheat oven to 375 degrees F. In small bowl stir together cranberry sauce and brown sugar. Set aside.
  • 2. In large bowl combine ground beef, bread crumbs, onion, bell pepper, milk, egg product, salt, parsley, thyme and oregano. In large shallow baking pan, shape meat mixture into a 8x4x2-inch loaf. I baked mine in a loaf pan. Bake, uncovered, for 30 minutes. Spread ¼ cup of reserved cranberry sauce mixture on top of loaf. Bake 20 to 30 minutes more.
  • 3. In small saucepan heat remaining cranberry sauce mixture over low heat until heated through. Serve with meatloaf. 8 points per serving

Tips:

  • To ensure the meatloaf remains moist, use a combination of ground beef and ground pork. The pork helps keep the meatloaf juicy.
  • Add some panko breadcrumbs or crushed crackers to the meatloaf mixture to help bind it together and create a more tender texture.
  • Don't overmix the meatloaf mixture, as this can make it tough.
  • For a flavorful and tangy glaze, combine cranberry sauce, brown sugar, and Dijon mustard. Brush the glaze over the meatloaf during the last 15 minutes of baking.
  • To prevent the meatloaf from drying out, cover it with aluminum foil during the first half of baking. Remove the foil for the last 15 minutes to allow the meatloaf to brown.
  • Let the meatloaf rest for 10-15 minutes before slicing and serving. This allows the juices to redistribute throughout the meatloaf, making it easier to slice and less likely to fall apart.

Conclusion:

This cranberry meatloaf is a delicious and easy-to-make dish that is perfect for any occasion. The combination of ground beef, ground pork, and cranberries creates a moist and flavorful meatloaf that is sure to please everyone at the table. Serve it with your favorite sides, such as mashed potatoes, green beans, or roasted vegetables.
