2 cups ricotta cheese
1 cup all-purpose flour
1/2 cup grated Parmesan cheese
1 egg, lightly beaten
3/4 teaspoon salt, divided
4 quarts water
3/4 cup butter, cubed
2 tablespoons minced fresh sage
1/2 cup chopped walnuts, toasted
1/8 teaspoon white pepper

  • Finely chop 1/4 cup cranberries. In a large bowl, combine ricotta cheese, flour, Parmesan cheese, egg, 1/2 teaspoon salt and chopped cranberries; mix until blended. 3/4 cup all-purpose flour, plus more for dusting
1/2 cup freshly grated Parmesan
1 lemon, zested
1/2 teaspoon kosher salt
1 cup drained whole-milk ricotta
1 large egg
8 tablespoons (1 stick) unsalted butter
15 large sage leaves
Kosher salt and freshly ground black pepper
1/4 cup fresh lemon juice
1/3 cup freshly grated Parmesan cheese

Steps:

  • For the gnocchi: Combine the flour, Parmesan, lemon zest and salt in a medium bowl. Add the ricotta and egg. Mix well with a wooden spoon or your fingers until the dough just comes together, taking care not to overwork the dough, which could cause it to become tough.
