- Preheat oven to 350℉ and line a baking sheet with foil.
- Pierce sweet potatoes a few times with a fork and place onto prepared baking sheet. Bake for 55 to 65 minutes, until sweet potatoes are tender when pierced with a fork or sharp knife. Let sweet potatoes cool slightly then slice open lengthwise and spread open slightly. Mash pulp of each sweet potato with a fork.
- Combine chopped walnuts, cranberries, butter, brown sugar, cinnamon and salt into a medium bowl; mix well.
- Mound each sweet potato with 1/3 cup cranberry walnut mixture. Place sweet potatoes back in oven and bake an additional 15 minutes, until topping is warm and fragrant. Remove sweet potatoes from oven.
- Drizzle sweet potatoes with maple syrup and serve warm.

- Preheat oven to 400 degrees F.
- Scrub & pierce the sweet potatoes, then bake them for 1 hour or until tender.
- In a small saucepan, saute the onion in the butter until tender, then add the cranberries, syrup, water, cranberry juice & just 1/8 teaspoon of the salt.
- Bring to a boil, then reduce heat, cover & simmer for 10 to 15 minutes or until the berries pop, stirring occasionally.
- Stir in the walnuts & mustard & heat through.
- Cut the potatoes in half lengthwise, then sprinkle with the pepper & remaining salt.
- Top each half of potato with 2 tablespoons of the cranberry mixture, & sprinkle with chives.

- Heat oven to 350 degrees. Coat a 9x13 inch baking dish with non-stick cooking spray.
- Cook sweet potatoes in microwave until tender. Cool slightly, then peel and cut potatoes into 1/4 inch slices.
- Arrange half of potatoes in prepared dish; sprinkle 1/4 cup brown sugar on top. Drizzle with 2 tablespoons butter and top with half of cranberries.
- Layer remaining sweet potatoes, brown sugar, butter, and cranberries over top. Pour orange juice evenly over casserole.

- On a baking sheet, toss together the sweet potatoes, oil and some salt and pepper. Roast until the potatoes are golden brown and cooked through, 30 to 40 minutes.
