1 cup butter
2 bunches green onions, chopped
¼ cup chopped fresh parsley
2 pounds peeled crawfish tails
2 tablespoons all-purpose flour
2 egg yolks, beaten
1 (12 fluid ounce) can evaporated milk
1 (1 pound) loaf processed cheese food, cubed
salt and black pepper to taste
hot pepper sauce to taste

Steps:

  • Heat butter in a large pot over medium heat. Stir in green onions, and cook briefly. Add parsley and crawfish, and simmer about 7 minutes, stirring frequently. Stir in flour to coat crawfish.
  • In a small bowl, mix together egg yolks and evaporated milk. Stir into crawfish, and reduce heat to medium-low. Gradually add cheese cubes, stirring continuously until the cheese has melted. Season with salt, pepper, and hot pepper sauce. Remove from heat, and bring to room temperature before serving.

Being from New Orleans, and being a true 'Cajun cook' I create a lot of my own recipes simply by experimenting. This dip recipe came to me when I decided that adding crab boil to almost anything will make it taste incredible. Everyone that tastes it agrees! It's best when prepared a day ahead of time and reheated. Serve with chicken flavored crackers.

12 ounces frozen peeled crawfish tails, thawed
¼ cup butter
2 cloves garlic, chopped
1 tablespoon crab boil seasoning
1 teaspoon salt
1 tablespoon Old Bay Seasoning™
1 ½ (8 ounce) packages cream cheese

Steps:

  • Place the crawfish tails into a food processor and pulse until roughly chopped. Set aside.
  • Melt the butter in a large skillet over medium heat. Add the crawfish tails, garlic, crab boil, salt and Old Bay seasoning. Cook and stir until garlic is toasted. Remove from the heat and stir in the cream cheese until it has melted. Serve the dip warm or refrigerate and serve chilled.

½ cup butter
2 pounds crawfish tails, with fat
4 (8 ounce) packages cream cheese, room temperature
1 bunch green onions, chopped
1 cup mayonnaise
½ teaspoon hot pepper sauce (e.g. Tabasco™), or to taste
1 teaspoon Worcestershire sauce, or to taste

Steps:

  • Melt butter in a large skillet over medium heat. Add half of the green onions, and cook until wilted. Add the crawfish tails, reduce heat to medium-low, and simmer for about 10 minutes. Set aside to cool.
  • In a large bowl, stir together the cream cheese and mayonnaise until well blended. I like to use an electric mixer. Season with hot pepper sauce and Worcestershire sauce until the mixture is pink in color. When the crawfish have cooled slightly, stir them and the butter into the dip along with the rest of the green onion. Mix well, cover and refrigerate overnight to properly blend the flavors.

2 pounds processed cheese food (such as Velveeta®), cubed
1 teaspoon condensed cream of mushroom soup
½ cup butter, divided
2 onions, chopped
1 green bell pepper, chopped
1 tablespoon minced garlic
3 pounds peeled crawfish tails
1 teaspoon cayenne pepper, or to taste
salt and ground black pepper to taste
1 (10 ounce) can diced tomatoes with green chile peppers (such as RO*TEL®)

Steps:

  • Place the processed cheese and 1 teaspoon of cream of mushroom soup into a slow cooker. Turn the slow cooker to High and set aside.
  • Melt half of the butter in a large skillet over medium heat. Stir in the onion and green pepper; cook and stir until the onion has softened and turned translucent, about 10 minutes. Scrape the onion mixture into a bowl and set aside. Melt the remaining butter in the skillet along with the garlic. Once the garlic begins to sizzle and is aromatic, add the crawfish tails, and season with cayenne pepper, salt and pepper. Cook and stir until the crawfish is hot, then stir into the onion and pepper mixture.
  • Place the crawfish mixture into a food processor, and process until the mixture is finely ground, or to your desired consistency. Stir the crawfish mixture into the slow cooker along with the can of diced tomatoes. Cover, and continue to cook 45 minutes, stirring occasionally. Once hot, set the slow cooker to Low until ready to serve.

6 tablespoons unsalted butter
1 large onion, diced
1/2 green bell pepper, chopped
1/2 red bell pepper, chopped
1/2 cup mushroom, finely chopped
1 large garlic clove, minced
1/4 cup chopped flat leaf parsley
1 tablespoon dry white wine
1 lb crawfish tail, cooked and peeled
creole seasoning, to taste
fresh ground black pepper, to taste
hot sauce, to taste
8 ounces cream cheese, softened
2 tablespoons parmesan cheese, grated
1 loaf French bread
olive oil
fresh ground black pepper
paprika

Steps:

  • Preheat your oven to 375°F.
  • Melt butter in a sauce pan on medium heat. Add your onion, bell peppers, and mushrooms. Let cook 2-3 minutes or until onions start to turn translucent.
  • Add your garlic, parsley, white wine, crawfish, creole seasoning, fresh black pepper and hot sauce. Remember you can always add more seasonings later. Less sometimes is more unless you know exactly how you want/like it.
  • Let cook for 5 minutes, stirring occasionally. Add cream cheese and reduce heat, stirring until smooth. Taste and adjust seasonings to your taste. Pour into a baking dish and sprinkle Parmesan cheese on top. Bake for 15 minutes.
  • Slice french bread into inch thick slices. Brush one side with olive oil, and lightly sprinkle that side with fresh ground pepper and paprika.
  • Place slices of bread in the oven for 5-7 minutes or until toasted on each side.
  • Serve bread with crawfish dip.
  • You can substitute or add shrimp and crab in this recipe also.

1/3 stick butter
4 green onions (green and white parts) chopped
1 lb crawfish tails (roughly chopped if they are large)
1 dash(es) worcestershire sauce
1 tsp zest and the juice of 1 lemon
1 Tbsp chopped fresh parsley
1 8oz pkg cream cheese
1 3oz pkg velveeta cheese (if you like spicy use the velveeta pepperjack)
several dash(es) of hot sauce to taste (optional)

Steps:

  • 1. Saute the green onions and parsley in the butter for a few minutes. Cube the cream cheese and Velveeta cheese for easier melting and add along with the worchesterschire sauce, lemon zest and juice. When cheese is just about halfway through melting add the crawfish so it can heat through.
  • 2. When the cheeses have melted remove from heat and serve hot with crackers or chips or toast rounds.
  • 3. This is also excellent on thin slices of French bread that have been brushed on one side with olive oil or butter and lightly dusted with Italian herbs and grated parmesan and toasted in the oven. My favorite !! They are easy enough to make but we in South Louisiana are fortunate to be able to buy them in the grocery stores.

1 bunch green onions, sliced about 1 cup
1 small green bell pepper, diced
1 pound crawfish tails
2 cloves garlic, finely chopped
1 4 ounce jar chopped pimiento, drained
2 teaspoon Tony Chachere's seasoning
1 (8 ounce) package cream cheese
Small diameter French bread loaves, slice thinly and toasted with butter

Steps:

  • Saute onions, bell pepper and garlic in butter. When tender add crawfish, pimiento and seasoning. Cook about 10 minutes then add cream cheese over low fire. When mixed and smooth and bubbly it's ready to serve. Put a spoonful on a piece of French Bread and enjoy!

1 lb bulk sausage (hot is especially good)
1/2 cup onion, chopped
1/2 cup bell pepper, chopped
2 tablespoons garlic powder
1 (10 1/2 ounce) can cream of mushroom soup
1 lb Velveeta Mexican cheese
2 teaspoons Tony Chachere's Seasoning
2 lbs crawfish tails

Steps:

  • Take one lb. of the crawfish tails and process them in a food processor until well chopped.
  • Brown your sausage, onion and bell pepper in a large sauce pan; drain when sausage is done (I use my colander).
  • Return the sausage mixture to the saucepan and all all of the remaining ingredients except for the 2 lbs. of crawfish.
  • Mix well and cook over low heat until the cheese is completely melted.
  • After the cheese is melted, add the crawfish and mix well.
  • Let this mixture simmer for 10-15 minutes, stirring to keep it from sticking.
  • Serve this in a crockpot to keep it warm; also, it can be mixed up in the crockpot, just make sure to brown your sausage first.
  • Serve with chips or if you really want a spicy kick, serve it with my recipe of Saltine Snackers.

1 to 1 1/2 lbs. crawfish tails (I used (2) 12 oz. pkgs. frozen, thawed)
2 medium cloves garlic, finely minced (about 1 1/4 tsp)
1 (4 oz) jar chopped pimientos, drained well
2 teaspoons Tony Chachere's creole seasoning
1 (8 oz) package cream cheese
Small diameter French bread, sliced thin, buttered and lightly toasted (I used French bread twin loaves from Wal-mart Deli)

Steps:

  • In a large heavy skillet or pot, melt butter over medium heat; add green onions, bell pepper, and garlic and saute until tender, stirring so they don't brown. Stir in thawed crawfish, drained pimientos, and creole seasoning and cook about 10 minutes. There will be some liquid left and that's fine. Reduce heat to low, stir in the cream cheese until smooth and just beginning to bubble. Transfer to a serving dish and serve hot on buttered and toasted French bread rounds.

1 lb frozen crawfish, rinse and drained
1 lb velveeta cheese, cubed
1 can(s) rotel tomatoes, drained
1/2 c green onions, chopped

  • 1. Melt butter in a large saucepan over medium heat. Add onion and garlic, cook 5 minutes or until tender, stirring frequently. Add crawfish; cook for 2 minutes, stirring frequently.
  • 2. Remove mixture from pan, cover and keep warm.
  • 3. Add cheese and tomatoes to pan, cook over medium low heat for 5 minutes or until cheese melts. Stir in crawfish mixture and green onions. Serve warm with tortilla chips.

2 lb crawfish (or shrimp)
1/2 c green onion, sliced
1/2 c butter
24 oz cream cheese
8 clove garlic, minced (or 2 teaspoons garlic powder)
2 Tbsp ground red pepper (i start with 1 teaspoon and go from there. i have never used the full amount.)
1 1/2 tsp pepper
salt to taste
1/4 to 1/2 c chicken broth, if using fresh crawfish

Steps:

  • 1. Thaw crawfish if frozen, and drain, reserving liquid.
  • 2. In a 3-quart saucepan, cook onion in butter until tender but not brown.
  • 3. Add crawfish.
  • 4. Cook over medium heat for 10 minutes or until crawfish are tender.
  • 5. Break up large pieces of crawfish.
  • 6. Stir in cheese, garlic, red pepper, pepper, and salt.
  • 7. Stir in enough of the reserved crawfish liquid (or chicken broth if using fresh crawfish) until of dripping consistency.
  • 8. Heat through.
  • 9. Serve a with assorted crackers.
