⅔ cup white sugar
2 tablespoons honey
1 ½ tablespoons lemon juice
1 cantaloupe - peeled, seeded, and diced
2 tablespoons chopped fresh mint, or to taste
¾ cup champagne
10 leaves mint, for garnish

Steps:

  • Cook and stir water, sugar, honey, and lemon juice together in a saucepan over medium heat until sugar is dissolved and mixture is clear, about 10 minutes.
