2 cup spinach, rinsed
1 tablespoon olive oil
4 oz Mozzarella cheese, shredded
3 cloves garlic, minced

1/2 teaspoon red pepper flakes, optional
1/2 teaspoon Italian seasoning, optional

Steps:

  • Add olive oil, garlic, Italian seasoning, and red pepper flakes into a Ziplok bag along with 1 teaspoon of salt and ½ teaspoon black pepper. Seal the bag and shake until mixed. Add the chicken breasts, seal, and massage so the chicken is covered in the marinade, set aside for 10-15 minutes while you prep the remaining ingredients. Position a rack in the center of the oven and preheat the oven to 400ºF (200°C). 2. Quickly wilt the spinach in a skillet with 1 tablespoon olive oil, set aside. 3. 2/3 cup Packed Light Brown Sugar
1/3 cup Packed Light Brown Sugar (STREUSEL TOPPING)

8 ounces bow tie pasta
1/2 pint cottage cheese
1/2 pint sour cream

Steps:

  • Thoroughly cook bow tie noodles as directed on package (past al-dente).
  • Add cottage cheese and sour cream, mixing thoroughly.

1 can(s) mushroom pieces
2 clove garlic, minced
1 medium onion, diced
1 medium green pepper, diced
1 , 12 oz. pkg egg noodles, no-yolk variety (i use large)
1/4 c butter
1/4 c all purpose flour
2 1/2 c milk
1 pkg 8 oz. cream cheese
2 can(s) tuna, packed in water
1 can(s) small can peas, drained
salt and pepper to taste
1 c grated sharpe cheese
french onions to sprinkle on top of casserole

Steps:

  • 1. Sauté mushrooms, garlic, onion and green peppers in fry pan. Put aside. Cook the 12 oz. large bag of noodles in salted water; drain. 2. Melt butter in large fry pan and blend in flour. blend together. Add milk slowly, cooking and stirring constantly. When sauce is thick and smooth, blend in cream cheese. Then add cooked noodles, and lastly the whole can of tuna with water, peas, peppers, onion and mushrooms combination. Season with salt and pepper to taste; pour into a large 9 x 12 greased baking dish. top with sharp cheese and then sprinkle French onions or breadcrumbs and parmesan cheese on top. 3. Bake at 375 degrees for 20 minutes. Note: Make sure noodles are done before making sauce. The sauce gets too thick if it sits while waiting for noodles to cook. Make sure the sauce is really creamy before baking, if not it will be too dry when it is baked. To make sauce more creamy, add more milk to give it a good consistency. I like this recipe because it is made with cream cheese instead of cream of mushroom soup

My mom made this often growing up, it was always one of my favorite casseroles. It is now a often requested dish from my children.

1 lb ground beef
2 (10 ounce) cans tomato soup
2 tablespoons sugar
2 tablespoons Worcestershire sauce
4 ounces cream cheese
8 ounces wide egg noodles, cooked and drained

Steps:

  • Preheat oven to 350*.
  • Cook egg noodles according to package instructions. Meanwhile brown ground beef in a skillet. Drain.
  • Add tomato soup, sugar, Worcestershire sauce, and cream cheese to ground beef. Cook over medium heat, stirring frequently until cream cheese is all melted and sauce is smooth.
  • Combine sauce and noodle in a 2 quart covered casserole dish. Bake for 20 to 30 minutes until hot.

1 (12-14 ounce) loaf french bread, sourdough bread, or challah (1)
8 ounces (224g) brick-style cream cheese, softened to room temperature (2)
2 Tablespoons (15g) confectioners' sugar (don't leave it out, trust me)
3 teaspoons (15ml) vanilla extract, divided
8 large Eggland's Best eggs
2 and 1/4 cups (540ml) whole milk
3/4 teaspoon ground cinnamon
2/3 cup (133g) packed light brown sugar
1/3 cup (69g) packed light brown sugar
1/3 cup (42g) all-purpose flour (spoon & leveled)
1/2 teaspoon ground cinnamon
6 Tablespoons (86g) unsalted butter, cold and cubed
Optional: fresh fruit, maple syrup, and/or confectioners' sugar for topping
Day-old, crusty bread is perfect for french toast casseroles. I prefer challah bread. I slice it up and let it sit out all day.
Since the cream cheese is only mixed with a little sugar and vanilla, make sure you are using quality cream cheese that tastes good. I love full-fat Philadelphia brand brick-style cream cheese for this dish.

Steps:

  • Grease a 9x13 pan with butter or spray with nonstick spray. Slice then cut the bread into cubes, about 1 inch in size. Spread half of the cubes into the prepared baking pan. Using a handheld or stand mixer fitted with a whisk attachment, beat the room temperature (not cold!) cream cheese on medium-high speed until completely smooth. Beat in the confectioners' sugar and 1/4 teaspoon vanilla extract until combined. Drop random spoonfuls of cream cheese mixture on top of the bread. Layer the remaining bread cubes on top of cream cheese. Set aside. Whisk the eggs, milk, cinnamon, brown sugar, and remaining vanilla together until no brown sugar lumps remain. Pour mixture over the bread. Cover the pan tightly with plastic wrap and stick in the refrigerator for 3 hours - overnight. Overnight is best. Preheat oven to 350°F (177°C). Remove pan from the refrigerator. Prepare the topping: Whisk the brown sugar, flour, and cinnamon together in a medium bowl. Cut in the cubed butter with a pastry blender or two forks. Sprinkle the topping over the soaked bread. Bake for 45-55 minutes or until golden brown on top. I usually bake it for 45 minutes because I like it softer. Serve immediately. Cover leftovers tightly and store in the refrigerator for 2-3 days. Make ahead tip: Prepare the topping in advance, cover tightly, and store in the refrigerator. Sprinkle over the soaked bread before baking. For freezing, prepare the recipe through step 4 (without preheating the oven) and freeze for up to 2 months. Thaw overnight in the refrigerator then bake as directed.
